I would like to know how to age a character, I can't seem to find much on time and aging. I can find age and effects on a character, but what I am looking for is...for example if we have run 10 scenarios approx how much time is this 'in game'? Is this a year? month? week?
I would like to Age my players characters as we go, so that they don't retire at a young age, in my opinion that would not make sense.

It's however long you want. It makes sense to me that my PCs age in 'real time' - one year for every year of the campaign. So my cleric, first played in 4709 AR (2009 in real life) is now six years older in 4715 AR.
Be aware that the effects of ageing (e.g. physical/mental stat changes) are not used in PFS.

Time isn't defined in between scenarios. I don't know if it's the official rule, but we're only allowed to use one Restoration (to remove a negative level) per session, so assume it's a week in between adventures.
Hell, even in a scenario itself, time might be vague. You're summoned in Absalom, then shipped off toward the Worldwound. For each session. How long is that travel? There's even a scenario that says you're on an expedition for 3 weeks before arriving at your destination. You run through the adventure, then take a 3-week hike back. That's nearly two months worth of time for one adventure. I think they realised that pretty early on, and that's why time isn't a factor in the game.
It's sort of moot, anyway, since time isn't chronological in the first place. You're allowed to run an adventure that takes place after an adventure that's supposed to precede it, so technically, your character would already know of the events that took place. It's all wibbly-wobbly stuff that's better off not discussed.

You can only use one Restoration during a normal scenario, to remove a permanent negative level, as there is a rule in the spell itself about that, but you are allowed, if your funds/PP can cover it, to get as many as you need between scenarios.
Restoration
This spell functions like lesser restoration, except that it also dispels temporary negative levels or one permanent negative level. If this spell is used to dispel a permanent negative level, it has a material component of diamond dust worth 1,000 gp. This spell cannot be used to dispel more than one permanent negative level possessed by a target in a 1-week period.
However, as the time between scenarios is undefined, you can get any additional needed Restorations before your next scenario, even if that is at consecutive slots at a convention.
