I was wondering if you could stack the Empower Metamagic feat twice on Gravity Bow to give it a 100% bonus increase so that your arrows deal damage 2 category sizes larger at the cost of a 5th lvl spell?
No. Empower only works on variable numeric effects. Not only does Gravity Bow not have a variable effect, increasing the effective size of your bow isn't even a numeric effect. Not to mention that you cannot stack the same metamagic feat twice on the same spell, unless the feat explicitly says that you can.
