In our games for gestalt you pick to classes and take them to all the way to 20. To accommodate prestige classes you can use them to replace one of the classes then go back to the original class (in this case sorcerer). So, one the 2 sides for the character will be sorcerer 5, dragon disciple 10, sorcerer 5. Trying to figure out where to go with for the other class.
Character back story thus far: Zighergo grew up in a kobold tribe dedicated to a black dragon. He idolized the dragon's strength and awe, but was sickened by his cruelty. At a young age he vowed he would come a great dragon someday as well, but he would protect the innocent rather than subdue them by fear. He ran away from his tribe when he learned they were planning an attack on a nearby village, something he wanted no part of.
Soon after leaving the protection of his home he was captured by slave traders. He quickly earned their ire by refusing his new role of slave constantly chanting, "I am not a slave, I am a dragon." This led to him constantly being beaten and in poor health when he will run into the party.
He will meet the party soon as the slave traders are on their way (unknown by the party) to their village (the one that will be attacked by kobolds soon) to sell slaves to them. Once they save him they will be warned that the kobolds and likely the dragon, are going to attack the town. At this point, he will be available as a cohort or an alternate character option.

I was going to say alchemist. Think vivisectionist for extra damage. Beastmorph could net more temporary draconic features. Mutagen for more of whichever physical stat you need. Extracts for other buffs or utility. All you really need is enough intelligence to use your extracts... and you can make due with less early on unless you're just a skill point junky.
Dragon's Breath could be a fun extract, but it comes too late to be important.

The Base attack Bump could come from any Martial Class. The real reason to go Paladin is for Divine Grace, which only requires 2 levels of Paladin.
You could go For Fighter for extra Feats and weapon training at 5th level (3rd for Weapon Master archetype, but that is not so good for Dragon Disciple), barbarian has been mentioned though Dragon Disciple already gets 1d12HD, so you're picking this up mainly for Rage and Rage powers (look at one that gives you natural attacks while raging e.g. Beat totem, or fiend totem). Ranger gives you a nice set of feats, including permanent claws with aspect of the beast (they are only 1d4 damage, but unlike your Dragon Disciple claws are permanent).
I can't see much value in Cavalier or Gunslinger for a Dragon Disciple (why ride a mount when you can fly? why use a ranged touch attack when you have spells?)
Overall, we have:
Paladin (Divine Hunter) 2 (Gives precise Shot, useful for your ranged spells)
Fighter (Unarmed Fighter) 5 (Gives extra Feats, including Style feat and weapon Training with natural attacks)
Barbarian 2 (Gives Rage power)
Ranger 2 (Aspect of the Beast)
Any levels left over can be apportioned as you like.
Alchemist is also a good choice for natural attacks

are you allowed to double up on prestige classes?
this might be a little cheesy (and probably takes a little bit longer to come together than you'd prefer) but if you did sorc7->DD10->sorc3 on one side and pally6->eldritch knight 10->pally4 on the other i believe you'd end up with +20 BAB, CL 20, and 10d12+10d10 hp... there's quite a few levels where both sides grant you a caster level (which overlaps/is wasted instead of stacking), but it still might be worth looking at.

Pally really does give the greatest synergy here, especially if you're allowed to gestalt the pally as well into EK to get CL20 casting. Does pally suit your character concept though?
Also: from your description it looks like this is an NPC. I sure hope it isn't a DMPC. I wouldn't normally recommend building NPCs, even ones designed as cohorts, at the same level of optimisation as you would a PC (ESPECIALLY if you are a better optimiser than them!).

The campaign is kinda hard to explain. It's a bit of an open/living world campaign. Multiple campaigns will be played off of this setting and will play off of each other (with multiple people DMing different campaigns). The other players don't like making characters all that much (esp not the numbers part). This character can serve as a cohort, a new character for another game (played by me or anyone else), an NPC, or all of the above.

I am doing the same for an upcoming Skulls and Shackles game. There are only two players so we have gestalt rules for our main chars to make up the shortfall with a support char each.
I’m going Ranger/Sorcerer taking the two handed combat style with a two handed sword/power attack and going into DD at 6th level. Crossblooded Gold Dragon/Abyssal bloodlines.
It is loosely based on Elric of Melniborne with him being an Albino Assimar from Cheliax with a big black two handed sword; should be an amusing campaign.
Going to see if we can make the ship sail on land and sea … I’m sure binding some elementals should do the trick.

Sounds like a cool idea. Not where I'm headed with this character though. He won't be using a weapon all that often relying more on natural attacks when in melee (and turning into a dragon). Also since he is a kobold the strength and constitution bonuses will just make up for his racial stats.
99% sure I'm going paladin at this point. Alchemist was very tempting, breath weapon bomb and mutagens for when casting isn't ideal.
