"Fiat Justitia Ruat Caelum" has always been a favorite of mine - although that might be better suited to CG Paladins (nevermind that Pathfinder hasn't gotten around to making one of those yet); "Fiat Justitia, Et Pereat Mundus" might be a certain degree of improvement for the traditional LG Paladin.
