I read that at level 1 you choose either cure or inflict and you add the chosen to your spells known as you level up. My curiosity is if that restricts you from using a spell known slot to gain the other of the two. I know that the cleric, if neutral, can learn both...so my thoughts are that the same would apply to the Oracle. I would also like to know if Oracle can take the Channel feats if they are of the Life mystery. Any input on this would be greatly appreciated. :)

The selecting of positive and negative energy for a cleric is for channeling, the class feature, not for spells. Clerics and oracles can both learn the cure and inflict spells.
An oracle adds all of the cure spells or all of the inflict spells as bonus spells known. This choice is made at first level. However, oracles can learn the opposing spell with their normal spells known.
Oracles can definitely learn channeling feats. Life oracle channel positive energy is the same as cleric channel energy if you choose positive or are a cleric of a good god.

Clerics can also spontaneously channel energy into spell slots. Good clerics can replace any prepared spell with a cure spell of the same level. Evil clerics can replace any prepared spell with an inflict spell of the same level. Neutral clerics replace prepared spells with the same energy type that they channel.
Oracles automatically get to choose either all cure or all inflict spells as spells known. They can then add the other to their spell lists by using one of their spells known slots.
In other words, yes an oracle can know both cure and inflict spells.
