I don't think explicit support for dual monitors is needed, but I would like to be able to alt&tab out to my second display so I can also work on other things, make notes, track email, track teamspeak, and check the web freely without having to worry about getting a blank screen or accidentally trigger an attack when I alt&tab back in.

Or one thing that I just hate when playing a game like Skyrim, having it break the custom mouse cursor. It's so annoying when that happens, because then you have your normal mouse cursor flying all over the screen as you're trying to move your camera or something and it gets really distracting.

For me, the most important aspect of Dual Monitor support is being able to run the game in Full Screen Mode on one monitor, while still allowing me to click out of the game in the second monitor to interact with web pages, etc. In WoW, this is called "Full Screen Windowed Mode".
It's extremely frustrating in games that don't support this, like Vanguard and LOTRO. In those games, if I'm running Full Screen, then the monitor flickers and minimizes the game if I click into the second monitor. I have to run the game in Windowed mode, and end up losing precious real estate to the window border and the Task Bar.

Don't have a second monitor, so this isn't too big of an issue for me, but a suggestion Nihimon (and anyone else) - I do plan to hook my HDTV up to be my new "monitor", and maybe this will allow you more viewing room? Of course if you are looking to run other programs simultaneously, maybe set the TV as primary for the game, and the monitor for the other program(s)?
On a side note, I am hoping for 3D support :)

The ability to rearrange and customize the UI is a must in an MMO, I think.
More commonly seen are 3 and 6 monitor setups like this and this.
None of these pictures really do justice to the actual experience of playing on one of these set ups, though. It's pretty awesome.

two monitors is awkward because your main focus of view (square in the middle) would look like half your character is on one monitor and half on the other
if this game were to support multi-monitor views, it would most likely be one of the aforementioned 3-monitor setups
something I could see happening would be having the actual game on one screen and the other being a handy utility window with access to your character sheet, inventory, and perhaps a searchable encyclopedia/lorebook or other cool gadgets - that would be pretty cool

I just run the game in windowed mode at native resolution so I can switch to a different window in that monitor if I so choose.
I do that too, when the game doesn't support "Full-Screen Windowed Mode".
It sucks to lose the screen real-estate to the title bar and Task Bar. Yes, I know I can minimize the Task Bar.
I'm really hoping PFO supports "Full-Screen Windowed Mode".

I second that. Although there are 3rd party programs that can do it for me but I prefer when it is a base option in the game itself.
