I imagine the big money is in seizing settlements?

Can a LG settlement, be controlled by an Evil empire, or does it change alignements?

A LG settlement cannot be in an evil Player Nation.

... therefore if settlements can be forced into nations, then their alignment can be forcibly changed.

Or maybe the nation gaining the settlement changes alignment...

Ryan has said that you won't be able to take over a settlement. You will have to destroy it and any guard towers or settlement related buildings then rebuild the settlement to control it and area it influences.

I wish they would allow a settlements leaders to cede a settlement to an invading army, or a group that makes some kind of deal or whatever. But it's not a critical issue to me.

What would Alexander the Great "Necromancer" do?

"You can keep your aristocracy if you follow our ways!"
"Now hurry up, and Animate all your dead soldiers."
"I need more zombies proficient with siege weapons."
"And zombie elephants!"

Attacks: A zombie retains all the natural weapons, manufactured weapon attacks, and weapon proficiencies of the base creature. It also gains a slam attack that deals damage based on the zombie's size, but as if it were one size category larger than its actual size (see Natural Attacks).

Where are you getting this info from? Is there some PF creature database online?

I know the online game may be different from the role-playing game. But I would hope they'd try to keep as many features as they can.

Cool, thanks! I'm sure they will try and stay as close to the RPGS as they can. Where they deviate I'm sure they will provide good reasons for doing so.

Keep in mind zombies may be slightly different in Pathfinder than D20.

Here is the pathfinder info on zombies: Pathfinder PRD

Note the Pathfinder PRD is their own reference document specific to Pathfinder.

Toward the other part of the question, however, I should think that razing a settlement should be among the most lucrative (and most costly) actions a player organization could undertake. Since Lawful Good settlements are to be the most efficient they should also be the most wealthy of prizes (and likely also the most difficult to overcome).

Well, I would think that how profitable it is to pillage a settlement is inherently tied to how profitable the settlement is. LG has an advantage in efficiency, but if they can't make proper use of it, I don't see it having any more wealth than any other settlement.
