Personally, I've always wanted Were-vermin. Not tiny bugs, but something along the lines of the Aranea. Man to cockroach has been done famously in literature... why not RPGs?
Werebeetle, werecentipede, werescorpion. All of these would fit into many styles of campaign and provide a lot of creepiness.
The were cockroach sounds like one of the most disgusting things to run into in the dank recesses of the sewer, and now I must see one.

How about instead of the character being forced to adapt the alignment of the were-creature, it is the other way around?
So the curse only awakens your "inner animal" and you turn into the creature that fits alignment and personality best?
So a noble Hero guy bitten by a Werewolf could turn into a Werebear, while the cowardly and selfish thief of the group would turn into a wererat.

Transformations of humans into donkeys are a common theme in fairy tales.
I think this is heading in the right direction, though I'm not totally sure about situations where oyu get bitten by a werebear and turn into a wererat, it feels kind of strange. Maybe there coudl be a good and neutral/evil version of each? Werewolf/Weredog, Weretiger/Werelion, etc.

That was the way 3.5 handled it. PF simply dropped that portion of the Lycanthrope curse.

Also, I do like the idea that the animal form could be based on the person's alignment, regardless of what bites them. That would be a pretty cool take on it, and having them be similar animals, but just a bit different based on alignment, sounds like it could work quite well.

It's basically making Lycanthropy a "bring out the beast in you" disease that affects each victim differently, with the only similarity being "you turn into a monstrous animal". But I like the "differing variants based on alignment" idea, though it does run into a bit of GM favoritism of "Why is this one the good one and that one the evil one?" "Because I like this one more than that one." ;P

How come we've never seen were-humans for animals? They could be threats in a goblin campain, a bunnyian (elf=elven,bunny=bunnyian or something) were-dwarf anyone? Nothing screams revenge better than bambi as were-conan.
I'd actually like to see a lycanthropic strain from the shadow plane to be honest.
Wolf Were was a murderous, deceitful creature. The animal weres were all evil in the late advanced MMs. Think horror movie Big Bad Wolf.
I'm thinking PC Lycanthropes are sorta rare. At 1st level they are infected, but by 15th level they become full born lycanthropes. They need to make will saves to avoid acting true to their were behavior. A were Dog would be forced to change and attack in front of their family if a threat comes through the door, even if they are the king's knights.
Were Squirrels are CG. They are driven to collect nuts and bury them in the ground. They are also driven to free slaves and political prisoners. They have a climb speed 10 faster than their land speed.

Also, if PF has lycanthropy, and bestiaries full of magical beasts and fantastic creatures, why not werecreatures based on those creatures?
