Like the title says, I'm looking to send my PC's on a big ol' fetch quest. The problem is, I don't know what I want them to fetch.
The PC's (5-7 of them and dropping. PC in-fighting is fun) are level 7-8 and due to the nature of their rolled stats, have a (overkill) point buy-in of about 31-33 points. Also, due to the nature of their campaign, the amount of magical items they posses is higher than normal so they are quite powerful. That being said, I don't want to send them to their doom quite yet, so stop me if you think I am.
So far I have decided I want them to get "One of one thousand eyes". This will be accomplished by them finding, (and butchering) a Gibbering Mouther.

I would like them to get two more objects. Don't worry too much about canon, just so long as the monster/object could be found on the material plane. Paizo monsters are preferred, though third-party is allowed. Any other details you would like to provide on location, description, stats, accompanying monsters, links, etc, would be appreciated. Does it need to be a part from a monster or are ordinary objects like harps, rings or ropes ok as well?
Just curious.
It should be relatively hard to get, but not impossible at the same time. A fetch quest for level 7-8 should not involve going to the local general store and buying 3 feet of rope, six apples, and a left handed golf club. But at the same time, I'm not looking for them to ascend to the highest point on mount Olympus and gather the tears of Zeus by kicking him in the nards until he weeps. It doesn't have to be part of a monster, though it should probably be guarded in some form or difficult to reach at the very least.
When designing fetch quests, I find the best solution is to put them on adventures/quests the pcs and players have interest in or are looking for excuses to go on. So I would ask, what are your player characters like, and what are their goals?
The PC's are working for an criminal organization. The campaign is focused on heists, whether it is breaking into a bank, or kidnapping a princess for ransom. The motivation is much what you'd expect of an evil campaign, money and power, though to the merit of one of my PC's he wishes to become a Lich above all else, and this is the way of funding his ascent to lichdom.

Mind you my ideas may or may not be too mean as I don't regularly DM and am not ultra familiar with CR so creatures I may present might be too powerful for the group. That being said, I'll go off of the CR of one of the creatures you posted.
Setting: A perfectly kept and immaculate ancient stone temple stands at the summit of a mountain. Besides the occasional wraith / ghost, the temple is fairly empty. The item they seek is the Blood Pearl said to have unusual and dangerous powers. Legend says it's kept in a hidden room (just behind the throne rooms back wall) and has been guarded to this day by an unknown force.
That unknown force happens to be a Shining Child summoned by the now dead king's high wizard and entrapped inside a large room with high ceilings but otherwise mundane, except for an altar a the back of the room which holds the still shining and polished Blood Pearl.
When the party enters the room, the door they come through slams shut and locks (a bit cliche' but eh) and the Shining Child appears and attacks the party.
If they succeed they may claim their prize, the Blood Pearl. Which is magical, but is actually cursed (thus the reason it was locked and guarded by a creature in a room). The curse is up to you as is the will save to go against it, but a curse I had in mind was something of a paranoia sort of thing seeing what you had posted of the adventure. For instance, a person failing that save, may think others are trying to steal from them constantly. Of course you could make it so that the curse only makes them paranoid around NPCs to avoid PVP.
Also, if the Shining Child is too difficult I suppose you could just switch it out with a lesser creature or offer ways to escape. Like I said, not usually a DM and don't know a whole lot about CR.
Just an idea of course and if that doesn't work, I could probably try again. :)

In that case, I might suggest something that's like to advance both the lich wannabe's knowledge of undeath as well as the rest of the group's greed. Perhaps one thing they're looking for is locked up in the tomb of a well-known necromancer king/pharoah. Perhaps a mummified organ in a canopic jar, for example. The group has to use their rogue-like skills to navigate traps and guardians as well as the mummy king himself. Of course, the tomb is said to hold fabulous treasure of the lost ages as well as knowledge of ancient necromantic rituals of immortality.

Not to steal from an overdone idea, but you could use it - have the party sneak or infiltrate into a holy temple in a city dedicated to that deity.
In there they must acquire something that is held in extremely high regard by the clergy and worshipers. Make the relic be equivalent to a piece of the cross from the cruxifixion or a text from muhammand. Something of that importance would be extemely well guarded and after it is gone and if they party was successful - they now have to deal with an angry deity and followers. Talk about constantly looking over their shoulders.
But also with an item like this think of some of the most deadliest traps to throw at them. Something of this value should not be a cake walk.

The article in dragon had the Litch formula including blood of a vampire.
They heard rumor of a vampire sealed in a crypt. When they find it, it's in a piano box wrapped in chains. Within they find a vampire unicorn. Stephan will give them all the blood they need if they help him get revenge on the one who killed him. It was an evil prince, now a major lord, who became successful because of the potions he stirred with Stephan's original horn.
