I am creating and GMing an evil one shot adventure. The players are all 10th level and can use any Pathfinder resources as long as they fit alignment restrictions (the PC's are all CE.) They are geeking out over their characters and are min/maxing/power gaming to the limit (as intended). I need advice on what to throw at them.
They are working for Demons and are attacking a Fort in Mendev. So far I have planed out 6+ encounters with a mix of pallys from the GMG and level appropriate good outsiders. Since they are going to be much more powerful the regular 10th level PCs, what are some good enemies/ encounters I could throw at them?

Demons? Bring Devils. Nothing says loving like The Blood War. Google it. Best part of Planescape.

They are min/maxing for good outsiders... This would really mess with them. *Evil Grin*

Some would argue it was the only part of Planescape, since even angels would work machinations and plots regarding it.
First, honestly, in the middle of the fight have an appropriate CR angel show up. They'll probably hack off its wings and torture it to death but you have to let your evil side have some fun first. THEN drop you devils on them (which they are unprepared for). Alternatively, if you don't want the blood war or they are geared for killing law as much as good you can drop a rival demon faction that shows up late in the play, rather than trying to ruin their plans this faction just wants to snatch their victory away at the last second by stealing the Macguffin/changing the portal destination/whatever so that THEY get the goods.
Hell, they're chaotic, the succubus trying to play them MIGHT just ask really nicely and try to get them to switch sides. It's demons, that's how they roll.
But this is all vague and I'm betting you want specifics, which is hard to do when I don't know their makeup.
Here's evil succubus:
Rohnetaal the Succubus (sor 1/rog 2), dedicates her skill points and feats to leadership and charisma stuff, and uses sorcery to give her access to wands and staves and such.
Her gear includes a ring of nondetection, a +1 shocking scorpion whip, wands of acid arrow, fireball, glitterdust, mage Armor, and whatever else you think appropriate from the sorceror spell list. She usually has mage armor up, she has room to buff her stats with items, but I'm away from my books.
She's weak, but she's got style and I'm sure someone can optimize her even better.
Her partners-in crime will be two Vrocks, one a raging barbarian and one a skilled fighter with a spiked chain, since Vrocks are solid fighters anyway they make good enforcers.
On the Devil side I think a change-up of an Imp Cleric (Spellcasting focused) with 3 Horned Devil brothers in his service (an odious shame, but they really should have folded in that card game) that he buffs up with magic.
And for Angels you drop a Hound Archon with fighter levels and a greatsword teleporting around the field of battle and bringing righteous fury.
Beyond that enemies need to be plot specific and will generally be neutral or their goodness will be a secondary concern. I mean, your average adventurer hunts down the Evil Cult™ but along they way they'll be facing the Neutral owlbear, neutral tendriculous, evil-but-unrelated giant clan, and good-but-misguided city guards based mostly just on how they get from point A to point cultist den. Whether their target is defended by angels, devils, constructs or wizards is plot-driven stuff and I don't know much about that particular fort.
Still, if you can manage to make a semi-humorous encounter with what is clearly an adventuring party of PCs from another continuity where you players are the evil NPCs I say go for it. Have the wizard shout "baddies" and the cleric mutter something about "stupid evil NPCs" and other things that lean on the fourth wall.
Or maybe that's not your style, but a mercenary band of semi-goodies makes sense.

I'd go standard collection of Mendev good aligned defenders staffing the fort. But have a contingent of Hellknights show up that are doing tours of the Worldwound perimeter. This way if they do any scouting they will be caught unaware.
Is there any good online resources for stated out npcs especially Hellkights?

Hi Jedira,
There are some hellknights over at d20pfsrd. It's canon that Hellknights sometimes have working relationships with devils, so that could work well.
Also, don't forget one of the most iconic Good monsters of all: metallic dragons. A Young Adult silver dragon, or a Mature Adult copper dragon, is CR 13. (I think the copper is the more dangerous of the two, myself, but go check them out and decide for yourself.) It can be the final boss, coming in to relieve or rescue the defenders just a little too late. Have it glide down out of the clouds just as your PCs are slaughtering the "last-stand defenders" and just enjoy the expressions on your players' faces.

Yup, Dragons are definitely a good choice.
In terms of Good Outsiders, a Ghaele Azata is CR 13 and a 13th level Cleric spelcasting-wise in addition to all it's other capabilities, and with some customized gear and spell selection can be a serious threat to even the most optimized 10th level party. Especially with some time to prep.
Monadic Devas are also tough for their CR (especially with Mirror Image up).
Also, don't forget some non-Good stuff. Golems and mercenaries are both real possibilities working for the side of good, and might be a nice change of pace.
