Now I guess RP comes into this a lot since a good character concept can sometimes make an average class really fun to play.
So I guess the question is what is the class which has the most potential for fun, and what in the past have you found the most fun playing ?
For myself I found a lot of fun with the alchemist just from the variety of abilities and the fun you can have with RP self experimentation mutations etc ;)

The rogue is my favorite.
I get to do melee combat, scouting, talking, handling logic problems, going solo, and using the magic items. What's not to love? Basically, as a rogue I get all of the screen time. I do all the work. I tell the other players where to go, what to do, what's to see, and when it is all over, I get to look at the treasure first. I can be outdone by other PCs when they try hard, but I'm working all the time so I'm the one who tells those lazy bastards when to try.
This is all assuming a campaign written by the GM with a sandbox feel.
If it is a published adventure, the wizard is the most fun because I'll just have the spell I need all the time and use it to be the best character. Same stuff as above.

I've never played a Druid back in 2nd Edition.( I thought they were too into Nature and the harsh True Neutral alignment is very hard to roleplay for me) and when 3.0 came out I tried a Druid only to be killed by Wild Wolves in my first encounter ( There was a pack of Wolves and I successfully used my Nature Skill to make one of the Wolfs not attack me... only to have a "party member" cast Burning Hands on the same Wolf in the same round.... which pissed off the WOLF and then subsequent critted me 3 times and instant killed me ( I was 3rd level).. Infact the pack of Wolves dragged my body away and ran away... (With the party laughing)...
...so I gave up on Druids... an 11 years later with Pathfinder I decided to try a Druid again... .and this time with not so stupid party members its really fun... I've gone through level 1 to level 5 and playing Jade Regent AP playing a Gnome Druid with the Fire Domain...
... very weak at low levels but now my character is starting to shine... with Wild Shape and I can even throw a Fireball once per day or a Summon nature's Ally..
.. I'm still trying to figure out the Roleplaying but its very fun. And Because of my low STR score(10 Gnome) its the first time I've had to not be the adventurer that had 120 feet rope,10 greek fires,ect full camping gear.. I had to actually tick down all my gear weight I (my Dm was stern but Fair... and eventually I did get a Handy Haversack)

Personally, I've really enjoyed the samurai.
They are put together well mechanically, have fun cinematic options and you get an awesome man-eating murder horse to watch your back/get you around the battlefield.
Also, I'm a samurai movie junkie so when I read through the class I was sold in a heartbeat.

I'm having a lot of fun in my group's campaign as a Witch. I can curse people, heal my allies, buff and debuff and throw lightning bolts all in a day. Sure, my spell list isn't as broad as a Wizard's or as medicinal as a Cleric's but I've found that with the right character idea and patron choice the Witch is pretty solid.
The Magus is fun as hell too. As is the Oracle.
But really, we've played in my group damn near every class and they are all fun.

It all depends on what you mean by "fun". I am serious that I have so far had fun with every class I've played. But that's because I play my characters, there really isn't that much about the mechanics of any class that provide the real "fun" I have with the game. I mean I enjoy the heck out of the tactical stuff and love having versatile characters, but that's the same sort of "fun" I can get with a good game of Axis & Allies or Chess. What makes role playing games "fun" for me is role playing my characters, and so far I've not noticed any one class being more "fun" to role play than any other. It's all about the quirks and personalities of the individual characters and how much I can bring them to life. When I do that well, I have a whole lot of fun, even if we are getting our asses kicked in combat, and when I don't do that well, I feel sort of let down even if we kicked the door down and rained some heavy beat-down on some NPCs.

I like versatile classes. I had fun in a one-shot as a wannabe Legolas. In our main campaign, I played a dragon shaman, so I haven't had a lot of experience with other classes. I also GMed a lot. I'm currently playing a half-elf paladin 7 and a half-orc witch 7.
I think I would really like to play a highly mobile rogue, especially with all the skill compression from 3.5 to PF. Alchemists, barbarians, and inquisitors look fun too.

Well if I must pick, the Witch is a load of kicks and giggles.
The spell selection is befitting, you pretty much always have something to do besides swing a weapon (heck, I even play both my Witches as those that don't dirty their hands, but rather makes the rest of the party do it.), and you just get to be absurd in everything.

Depends on what's 'fun' for you.
I'm a Salesman and a talker besides, so I love classes that are high Charisma and let me be the party face. Sorcerer, Bard, Paladin. (Have yet to try Summoner or Oracle. Will NEVER play any sort of Gunslinger, Mysterious Stranger included, unless we do a Steampunk or Wild West campaign.) I enjoy combat, but I prefer the tactical side of it and never choose options that offer high DPR. My combat contributions usually go Buffs-Control-Debuffs-Summons. For that the Sorcerer (and Wizard, although I don't like dumping CHA) are the unparalleled masters. Bard is a blast as a face, but in combat once you've buffed, your spell options are limited, so you'd better have a good direct offense prepared.
On the other hand, if you're the type of person who likes to be a DPR machine, a Bard is going to be a HUGE letdown. Sorcerers (and Wizards for that matter) can only do this as blasters, and the inevitable saves are going to frustrate you to no end, meaning you have to branch out. Otherwise the first time you fight a creature with Evasion there will be much wailing and gnashing of teeth as you have to sit there with your blaster-casting thumb up you arse and watch the Martials handle it. (OK, so a Conjurer with Augment Summons CAN pump out the damage, technically, but it requires a lot of tactical expertise from both you and the GM and you'll never be the one actually dishing the hurt.)
So on those rare occasions I just want to hit things REALLY HARD, Fighter is the unparalleled champ. Barbarian can be fun if you're low levels, but once you start nearing double digits it's amazing as a Fighter to just watch your bonuses pile up and up and up. Plus it's simple to build, simple to run, and hard to screw up. Multiple weapon proficiencies and training and the ability to eventually overcome DR means there's never a situation you can't theoretically beat to death.
And if you just want to be so powerful nothing can touch you, there's always CoDzilla, right?

Bladebound Magus. Very flavorful and still solid. Getting into a fight with your sword over something minor is entertaining... Unless it beats you in the battle of wills... Well that's still entertaining. Heh.
Half-orc Inquisitor. You want a frightening religious zealot? Big, mean, scary and on a borderline insane mission to cleanse the world of evil or monsters or whatnot. Plenty of great Archetypes to chose from and Domains/Inquisitions. In fact if you really like having a lot of control and choices in your build Inq is a good choice.
Those are my two favorite.
EDIT- In fact in thinking about it I think I just like hybrids the most. Magus,Ing,Bard and so on. So take my advice with that in mind. That is what I find fun. Having a wide range of choices and options without being game braking like full casters.

Any full casters for me, especially arcane casters. Possibly because I've wanted to be a wizard since I was 4 years old, and playing Pathfinder is the closest I'll ever get (alas, science means that not all dreams can come true).
Game-wise I also enjoy the wide range of options offered by full casters. There's always some interesting choices to make in every round of combat, whereas martial-types are often limited to "who should I full-attack this turn?" (I'm exaggerating, of course, but you get the point).
I also have a special place in my heart for the bard class, as I enjoy skilful characters as well as the whole bardic fluff, but ultimately their limited magical powers still make me prefer the full arcane casters, as I don't like having to spec for bows and/or melee as a backup.
Alchemist is another class I love on paper, though I haven't played one for more than a few sessions. Seems to be a lot of cool directions to take the class in, and although his "spell" progression is limited to 6 levels like the bard's, his bomb power means that he doesn't have to go out of his way to have something meaningful to do in combat, as is sometimes the case with the bard.

I do enjoy playing the god-conjurer-wizard. It's a lot of fun deciding where to paradrop monsters for maximum tactical advantage, and spamming the battlefield with glitterdust and flaming sphere effects to clutter things up.
The best is when I have enough summoned stuff to move around to maximally enable the rogue, setting him up for a massacre-sneak attack tour through enemy lines. Getting all the other players high on sadistic glee at the carnage they get to cause with the tactical situation I create, that's it for me :)

I had an Alchemist I created to join our party. He was a Gnome who made ALL his potions (and the party's eventually). His deal...he always had extracts for Greater Invisibility, Fly, and he carried a backpack full of iron spikes with a hammer. He'd invis, fly up to an enemy, Greater Dirty Trick pound a spike through an empty spot in their shoe and laugh all day long.
Plus he threw sickening bombs like no other. He was a fun little bugger.

Every class has the potential to be unique if you throw in the proper roleplaying elements. However because of the fighter's low skill points, I never use it other than a dip class because it's just too dull outside of combat.
As for my favorites, currently my PFS pistolero is really fun to play. He's a gunslinger from the wild west who fell into a mysterious portal and wound up in Golarion. He carries items like a leather jacket +1, Duster of Resistance, Blood stained sherif badge wayfinder, spurs that give -2 stealth, ect. He also speaks Common and American :) When he talks I try a southern accent with a wad of big league chewing gum shoved in my lip.

Rogue, because I make the Paladin go prematurely bald from worry, disappear and reappear a little later with more gold than creases, snatch up the shinies when no one is looking and generally play Id (as in: Id, ego and super-ego) to the hilt. Want that? TAKE IT! Does this look interesting? TAKE IT! If called on bad behavior, act remoreful, give it back, then go take it again later when everyone else is asleep! YAY! NAUGHTY BEHAVIOR!

I would have to say druid. I switch up between entirely different combat styles depending on my mood.
The only not-fun I have had with a druid is leveling up and adjusting all the sheets of paperwork accordingly. Which this means I'm not as hungry for levels which makes overall play better.
As a druid, I was never waiting for levels. I always had solid combat and out-of-combat options. (Get an animal companion over a domain).
Master Summoner and Sorcerer are close seconds.

I'm a huge fan of the NPC classes, mostly Commoner, Expert and Adept.
I've played a few games, where I talked the GM into letting me play NPC classes instead of PC ones with all of the IC social issues and what not. Being the brave warrior's (fighter, paladin, barbarian, etc) squire or actually playing the party animal handler/hiering really gives some great RP moments, like being able to actually *talk* with the normal citizen that are in awe/fear of the magic users or warrior's they've hear stories about, etc.

I haven't found one yet that isn't fun.
I'd probably even enjoy the gunslinger if I were willing to play such a hellspawned violation of all that is right and good about fantasy RPGs.
I feel exactly the same way.
I usually choose what character to play based on what my party mates have chosen. This has led to me playing, and enjoying, a barbarian, paladin, fighter, cleric, wizard (twice), and sorcerer, each long enough to get a good feel for the class. I've played a others for a few levels, and enjoyed those too. I'd be happy to play any of the remaining classes in future games.
I know this isn't the kind of answer you're looking for, Phasics, but I've not found which character class I'm playing to be particularly important to my enjoyment. When it comes to character class, having a well constructed party with good teamwork is far more important.

Personally I love my Vanara Monk. He's generally silly and does stupid, but usually rewarding things. He's a bit of a prankster too, even on the battle field. As a Monk he is definitely a squirrely thing. They have all sorts of various abilities that allows even more silly things to come into play. Of course, they're also pretty boss if you build them right too.

Well, I want to lean towards inquisitor because.....BATMAN.
Even if you said it fills a similar niche as the bard, you just have to compare them. Musician. BATMAN. Dancer. BATMAN. Speech Writer. BATMAN. I find that it is fairly clear which is better here.
So for technicals, it has a ton of skill points, decent BAB that can be boosted to act like full with a judgment, it has plenty of decent spells, the fun of a domain, and several abilities such as detect alignment or boosts to key skills that make it fairly versatile. And, unlike many of the other divine casters, you can play BATMAN without anyone asking too many questions.
Anyway we can get you to breathe in space?

im not sure if i have a class thats most fun, i love fighters for the amount of feats they get because i love feats.
i love master of many style monks because i LOVE style feats to death. so much flavor in them.
i love druids for the idea of turning into a GIANT CELESTIAL GORILLA and climbing a tree then doing a FLYING CELESTIAL GORILLA ELBOW DROP.
alchemist i love there bombs and there extracts system.
magus...whats not to love about attacking and casting at the same time? spellswords FTW
inquisitor is great RP, and finally a use for those teamwork feats!
probably my least favorite classes would be ones that cannot melee effectively from level 1, so wizards obviously. or paladins.

I can't think of class that I don't really enjoy playing. I guess Inquisitor is my current favourite though, as I get to join in pretty much any part of the game I want. Big guy to stand up front? Sneaky guy to scout ahead? Check out the taverns for information? Help heal up a battered party? Need to buff someone else while they take center stage? The Inquisitor can do all of these things!

PF and not 3.5 the most fun overall character I've had was a pally while the most consistently fun class was the gunslinger. It depends on what you find fun though, there is a lot of joy to be found in almost all the classes* and it really depends on how you rate the various kinds of fun. I enjoyed it when my halfling gunslinger was reduced to using her sling-of-David because her pistols were broken, but many people would find that more frustrating than fun. Plenty of people like using magic to twist reality, but I've never been a big fan of that so I find the magic classes less fun than other people.
*not monks. maybe my mistake was using maneuvers with a fighter first, but monks just come across as weak fighters with better saves. I honestly wanted the monk to be fun, but I was always thinking I could do the same thing much better with a fighter or a barbarian or a ranger.

This is what i think:
Summoner, great for the monstery type/creative type. i have sythesist, 12th lvl he has 40str 19dex 32con, 210hp he does an average of 200 a round he can do 12d4 breathe weapon plus fireball and greater invisiblity, teleport and fly. or if u dont want something like that just have your pet
separate.summoners are great for flying around boosting up your pet and allies while shooting from 60ft up invisible while your pet rips through armies. great fun for all.
Fighter, great for anything to do with weapons, if you want range fighters are great all the feats= 5-7d10 a round at 7th level plus close range bonuses. or 2 weapon fighter a great melee much better than 2h fighter greater cleave, rend two wep feats all put together = lots of damage. out right fun on the field and i love killing vampires. but if you want versatile and complacated foghter is not your guy.
gunslinger, i love them, tonnes of 1d8 shots, grit, versatile and are great tanks. not to complacated but not overley easy either. they are fun for shadowy western kind of players.
Cavalier, archetype cav, forgot what it called, u can get large/huge mounts that do like 2d12,2d6,1d10,2d8 at 10th level in 1 round, plus challenge +10 damage +5 to hit, great two wep fighting, but orders make you restricted, you can bind yourself to a lord. protect common folk, protect a faith, honour and protect a group of adventures. or bee gready and always get more. restricted but fun not reccommended for free play players but good for rp.
Witch my favourite. hex flying+invisible hexing with lightning bolts casting inflict critical wounds mass and contagion plus a heap of spells and familiars for skill boosting. a true skill class all fun no bor,great blasting damage and always living.
