(feels safe saying this from hundreds of miles distance - in a secure, hardened building, behind armed guards...)

I wouldn't have a problem with you playing the concept at my table, though Im not sure if I'd let you try to Ride check out of a hit to the 'mount' or not. It'd probably be a turn by turn thing based on what actions the 'mount' took the round before. Only 'mount' type stuff, sure. 'non-mount' type stuff, no.
Also, keep in mind that unless you give the eidolon the arms evolution, you won't be able to cast spells while inside it.

I've given this some thought and done some research and can find nothing specific against it. However if it had been sprung on me at a table at a con, I'd have been quite annoyed and likely ruled against it in various ways some of which have been mentioned above.
Not necessarily fairly, but out of a general dislike for the synthesist, and the feeling that something must be quite broken about the build to work the way you describe it. :)
Having said that, you can sit at my table and I'd allow it without prejudice. Other judges, I'm not so sure given the environment and the time needed to think it through.
Think pouncing quadruped eidolon plus paladin using a lance without any malus, using a ride check on a PC to avoid attacks and claiming that it is as the game is intended to work and you will see what is broken.
The problem of this kind of idea is that it will force Paizo to define what is a "mount" and what the often used phrase "The creature must be one that you are capable of riding and is suitable as a mount." mean, diminishing the game options for people that try less outlandish tricks.
As a general thing I am not against this idea at a home game, but some combo of effects seem to break the verisimilitude a lot.
Pounce+mounted combat without a problem
Using a ride check to avoid damage to another PC
Then there is the time the GM will spend while playing to adjudicate weird situations. Game time at a convention is limited. If your characters combo start to take twice the time needed to manage 2 separated characters all the other players at the table will suffer. As GM new to this combo will regularly have to adjudicate unusual situations without a body of tried and true rulings it is almost guaranteed that you to will be taking an unusual quantity of time for your actions.

Right, we've gone ahead and brewed up two separate characters (although my backstory is so fun, its the same character, different build). Neither version has pounce (don't worry, folks!). I've gone out of my way to make my character full of flavor and fun, but less focused on pure combat shenanigans. Hope to bump into you all at kublacon!
