We had our Christmas dinner early. Christmas lunch is at my sister-in-law's and I can't really eat it because of allergies, so I made the whole feast for Christmas Eve instead. Roast goose, brussel sprouts, mashed potatoes, gluten free caramel cake. So full now I can't even stand it. And done with the cleanup while the boys frantically try to figure out how to wrap my presents. Every year. It's not that complicated. We don't do fancy wrapping here. But apparently throw some paper on it and tape it closed is too much for them. :P
And now I am enjoying the quiet and the Christmas lights while I wait for them to finish so we can open the requisite Christmas Eve presents. Spoiler: it's pajamas. It's always pajamas. :)
So overheated from all the cooking though. Debating turning the AC on for a bit...

Seriously, I'd turn the A/C on, but I'm not allowed.
Wife has very few downsides, primarily being her half Jamaican self thinks 70 is cold.
No joke, she went to visit her grandmother in Jamaica, didn't turn her air conditioning on the entire trip.
Her father, who grew up in Jamaica, even used the A/C.
You know I said she's a dwarf, but an Azer may be more accurate.

My favorite Hot Fuzz moment: "...Narl?"
Very underrated movie. I like it more than Shaun of the Dead (which I really liked).
The TV show Simon and Nick did before they got into movies, Spaced, was also quite good, and way too short. The "I think you should burn it" discussion was brilliant.
Paul was also pretty good, and I hadn't heard of it until my wife, knowing I'm a fan of those two, bought me the Bluray.
The World's End was just so many levels of disappointment and mediocrity. It made me smile once or twice. Very clearly did not clear the bar those two usually set.
I even watched Cuban Fury because it had Nick Frost in it (along with Chris O'Dowd, clearly performing his best - he was hilarious and a jerk you just wanted to punch in the head), and despite it being a dance movie (which I hate those) it was extremely entertaining.

And I really should know better by now: Modern meat timing tables are written by lawyers hoping to ensure no one can ever possibly get salmonella from the bit of charcoal they call meat than people who actually care about say, flavor or texture or whatnot.
Yeah, I was cooking a 20-pound turkey yesterday. The timing table said 4 1/4 to 4 1/2 hours at 325. I know they run high and my guests run late, so I started the bird at 1:15 pm.
Needless to say, it was ready to come out at 4:45 pm (45 minutes early) and the guests weren't scheduled to arrive 'til 6.
What to do? What to do?
Well, the wrong decision is to drop the oven to 200 and leave the bird in for the remaining 45 minutes, then let it rest for an hour because your guests are over half an hour late.
Next time I'll serve properly-cooked, cold turkey, rather than the sad, dry bird that resulted.
Ah, well, live and learn!
And don't get me started on guests arriving 70 minutes after they said they would, and 40 minutes after we said we'd serve dinner. Everything that required timing (mashed potatoes, turkey, stuffing) ended up either overdone (turkey, stuffing) or cool and lumpy (potatoes, garlic bread). Everything that was last-minute (salad, peas, gravy) came out just fine.
Next time they're coming, I'll just say, "Sorry, I'm not starting the food until you're physically at the house. I just can't serve food of that low quality again."
Yeah, they thanked me and talked about how good it was, but I have standards, and last night's dinner wasn't up to them.
Timing is everything. Or at least quite a bit of things.
Bah, humbug!

When I have to delay serving turkey, I let the bird rest, then slice it and absolutely pack the meat into a baking pan. Then I pour a bunch of the pan juices over the meat and seal it up with aluminum foil. I do the same with the stuffing. Then, when guests arrive, I put the pans into the oven with the casseroles and everything comes out hot and moist. It's not as good as a freshly roasted bird, but it's not bad and will hold for hours. Just be sure to refrigerate it if it will be a long time, and reheat it thoroughly.

Has anyone tried the "breast side down" roasting method? I'm thinking of trying that as well.
The dark meat on the bird is lovely and juicy and amazing... but only 20% of guests eat it; most people want the white meat, so I figure sacrificing the dark in favor of the light is probably a good idea, too...
EDIT: And the sad thing is, I make an amazing roast chicken, following Julia Child's recipe. The difficulty is scale: I need to practice on a 20-25 pound bird for major events, and let's be blunt, you can't cook that for a 4-person family and not have a wee bit of leftovers to waste.
And NobodysWife does amazing soups with the carcasses...

We don't cook Turkeys, the kids and I have a soft spot for them.
Myself, because I was the only person as a kid they wouldn't peck at. Then again, I was the only person I didn't put corn in their back pockets before everyone woke up (I was a morning person who liked to laugh, with no television, what else was I to do).
Also my dad thought helping him butcher the turkeys would be good bonding moment (it wasn't) and my brothers all suddenly slept way in, so guess when being a morning person did not go well, joke was on me I guess. I can never eat turkey again.
My kids because we have a flock in the area they run with and gobble at.

Does uncorking a bottle of wine with a claw hammer make me white trash?
My mom was at a holiday celebration with my sister and my sister's in-laws a few years back, and they realized they had no corkscrew. My mom, without missing a beat, says, "No problem! Just smash it with a boot and strain it through a sock."
I don't think my sister's in-laws knew what to make of that suggestion. (I get my dry sense of humor from my mom, where no one ever quite knows if we're joking.)
