Just like normal pancakes, but there's a little bit of extra sweetness from the coconut. I find coconut to be a very versatile flavor. It goes well with both sweet and savory. Also coconut milk makes good cream for coffee. :)
edit: Use light coconut milk. regular is too gloppy and makes a poor substitute. Light coconut milk can be substituted for milk or cream in just about any recipe.

Now for the less pleasant part of my weekend...trying to finish all this homework. And of course everything is due tomorrow and Tuesday. I think I shall be loading up on math classes next term. I need the break. And I'm seriously thinking of changing my major to math anyways. Sorry, FHDM. I know your hatred of all things math. But look at it this way, if people like me who like it take care of all the math stuff, you don't have to. :)

lol. Sorry, man, I gotta do what makes me happy. And I like math. :)

calls up ACME, gets their "Adorable Oversized Puppy" Costume for $12.44, wears it and scratches innocently at Lynora's back door

How could you like a subject so naturally duplicitous? Did you know there are MULTIPLE ways to solve problems? MULTIPLE! And that the teacher will mark you wrong if you don't do it THEIR way? And they'll mark you even wronger if you don't show your work? It's madness- isn't that what we have calculators for?!?! It's an evil, evil subject, turn away from it before you are consumed!!!

Returned from the session.
And I learned that there are some interesting photos of me and another friend from New Year's Eve 2004. Wrestling. To quote a female coplayer that seen them yesterday: "If I were a gay I would be turned on."
Seriously, I don't recall me wrestling with that friend on that particular occasion - on a few others surely, but not that New Year Eve...

It would be 2004/2005 if I am correct. Those won't be topless photos of me and (male) friends from 2003/2004... I think so, at least.

A good friend here in Houston brought a buddy into town from Las Vegas for a job. He's just gotten a lease and a car...and they called everyone in for a mandatory meeting (those are never good): they almost closed my friend's entire plant down (he's head of operations), but they opted instead to only shut half of it down. My friend's freind who just entered all those commitments got let go.
::sigh::
it really sucks. My friend has twins on the way, and his wife is on doctor mandated bed rest, so the though of him losing his position was especially scary! :(

Weirdish.
I came back from shopping and noticed that doors to my room are closed and there is light coming from underneath. I thought it might be my brother or burglar. It was neither. Laptop lied on the table as usuall so it weren't burglar and there were no signs of my brother who hadn't visited me in year or more.
I just don't recall closing the door to my room before leaving as I don't do that anymore since I live alone. But it would explain why I left light turned on...
