Undead Ooze / certain Ooze traits

Hello,
my current concearn is that we have a dm, who is using a lot of mind-affecting abilities and spells, like mind control, phantasms and compulsions.
To my surprise, he allows 3pp content without restriction, so we are basically allowed to use everything we can find.
This leads to my question. I‘m playing a Jotun Warpriest with a few levels in the Gladiator Class from Tripod Machine. Managed to become a Graveknight, even though that will receive nerfs(he hates undead mastery). So I am undead.
Now I found the Ooze bloodline from Kobold Press, which gives lots of traits from the ooze creature type. Planned to get those powers via Eldritch Heritage, since charisma isnt a problem as undead.
But now I am confised, since the level 15 bloodline power „Ooze Mind“ lets me count as mindless in regards to spells and abilities. As I know, Oozes are immune to mind-affecting and the like, thanks to them being mindless. So I am undead and count as mindless. I should note that I am currently wearing a clear spindle ioun stone/wayfinder combo to gain some security.
The question itself: am I safe? Can I still fall under the control of any necromancer, due to my undead nature? Does my ooze mind prevent this, since I count as mindless? Was the wayfinder worth the investment? Mindless(ooze) protects from enchantments and charms, which mind control seems to be as enchantment.
I‘ll post bloodline etc. below and would like to hear some statements, preferably with source, FAQs or official answers to such topics.

With as much 3rd party material as you're using this isn't something the Pathfidner rules forum can answer for you.

The only answer you can really rely on is to ask your GM. And by the sound of it, the answer will be no.
