Arioch takes 2d8=6 bludgeoning damage as he is rammed by the giant dire manta ray he completely failed to see. I need a Profession Sailor check to keep the boat from tipping as you are rammed from underneath.

All you can see underneath the boat is a large grey mass. Angry at having been hit, the ray lashes out. Descending with a speed you wouldn't have believed possible a long whiplike tail with a sharp spike comes at the boat.
Okay, I assigned a number to each of you and one for the boat to determine who this strike is being aimed at.

The barb struck so fast you barely had time to notice let alone react before it struck Fin, right through his shoulder before ripping the spike out again. The ray continues to undulate beneath your boat tossing you to and fro as the tail whips around, ready to strike again.

Didn't include your DR in that. Going forward, just subtract that yourself.

Startling from the daze that comes from just staring at the open water for days at a time, Quick tries his best to balance the boat when it shudders. When the tail jabs over the side and into the warlock he starts but is ready for action quickly. "Bloody hell! You alright, Fin!?"

Quentin draws his rapier, readying a strike should the manta ray show itself again, whether that is its tail or its body. Because he is using a piercing weapon he isn't too afraid of striking down into the water.
Attack and damage, this is without any penalties due to striking in the water if that is where I see it.

Nimm fires his crossbow at the creature, but the water deflects his shot somewhat and it is only a glancing blow, leaving barely a scratch on the ray. Quentin and Kauul both ready their weapons to attack the tail when it strikes again. Adrick summons two celestial porpoises who struggle to swim near the ray as its massive undulating body bats them away without even trying.
Are you able to give some sort of commands to the porpoises or are they doomed to be snacks?
The manta ray lashes out once more at the one who hurt it before. As the stinger comes down, Quentin's rapier pierces it and Kauul slices into the tail, causing the barb to miss its target. The ray angrily rams the boat. You hear a crack as a few of the boards come loose and water begins to trickle into the dinghy.
Arioch hits true with his elemental ray, while Sanura casts a spell to help Fin
Only person who hasn't gone this round is Garan.

Okay, I'm taking Garan's action this round just to keep things moving.
Garan aims at the ray with his crossbow and just barely misses, his arrow sliding off the slippery hide of the angry creature.

"Accursed damn beast!" Nimm drops his crossbow into the boat and draws his short sowrd. He waits until the ray is near and stabs furiously at it.
Attack and damage: 1d20+7=9, 1d6+1=6
Nimm curses as the blow goes VERY wide!

Fin sends another bolt of energy at the ray.
Mind if I stop writing Eldritch Blast every time I do this? It's not like I have any other bolts of magic energy... 20, 9 damage

Wow, rolled well that time. Assuming I managed to make the attack, the second roll is my critical confirmation. So if I just hit, its 7 damage, if 22 backs the crit, then I did 14.

The ray writhes in pain as it is becoming quite wounded. Nimm misses, but Fin's blast strikes solidly as does Adrick's shot, though the celestial porpoises have been battered beyond what they can tolerate and vanish from whence they came. Kauul bravely attempts to repair the boat, but is barely able to get one hole patched before the ray's next attack. The ray rams the boat once more, leaving gaping holes where the wood has splintered apart and water is rushing in. The stinger comes whipping around again, this time towards Quentin, who pierces the tail solidly with his rapier.

Sanura slices at the tail as it slides away, cutting into the skin causing the ray to writhe even more as it feels the pain.

Five more damage, and since my Constitution will be dropping again from the poison (failed the save), I should be down to around 8HP, if I lose 4 points in Con.

Quentin curses as the barb pierces his leg after his rapier jabbed through it. He feels the rush of the poison inside him, but is determined to bring this thing down.

Ouch, dropped my con modifier by two, thats really going to leave a dent, especially on later checks. Hopefully Adrick is trained and can make heal checks for us.

Garan misses wildly. But Arioch hits the ray solidly with his energy attack. And Nimm finally manages to damage the blasted thing.
I need actions from Quentin, Fin, Adrick, and Kauul. Sanura has already declared her action, but she goes after the ray in the initiative count. And just for reference, your boat is at about 1/4 hp. So, you know, it currently is more of a sieve than a boat...
