You can try and trip the centaur by making a combat manuever check on your turn. You roll a d20 and and your cmb to it. Note triping quadrepeds is extremely difficult but not impoasible.
Yes you could jump around the field if you like but its no more effective than just moving and you still need to make skill checks so there is a chance you could fail where as if you just move you dont need to make any checks. Also you can move through downed enemies and allies spaces unhindered
