A natural 1 moves the result of your check down one step. So if your modifier was high enough to earn a success despite the 1, it becomes a failure. If your result was a failure, it becomes a critical failure.

Natural 20s work the same way going the other direction.

DC20 saves seem high, but many of us have +5 or +6 saves, so we are at least stronger than PF1 PCs. Consider some lvl 1 foes in PF1 had DC14 saves against things some PCs were 0 or -1 in.

After that, yes it is an interact action that takes 2 hands. This is why you will want to put things in belt pouches and bandoliers.

it is the GM's prerogative to roll secret checks in secret or let the players do it where they see the result. But I prefer the GM always do it, mostly because I want to see what it feels like and if it makes that much difference.
I prefer you roll behind a GM Screen spoiler. I never look behind those, and other players shouldn't either.
But I can make rolls ahead of time if you prefer. I would still put them in a spoiler so I don't know what they are. I don't see the benefit of that strategy.

don't forget that a crit failure on a check that does not describe a crit failure is still just a failure. Similarly a critical success in a check that does not describe a crit success is just a success
