I'm not sure if Ectoplasmic metamagic can be used to modify those spells. By its descriptions it suggest it only does anything for spells that are targeted against creatures, and none of the spells you meantion are like that.
Even if modyfing such spells was allowed, I don't think it would allow you to create ghost touch items. It would only allow to affect the incorpreal for the duration of the spell. The duration of fabricate, stone shape and wall of stone is instantenous, so it means that you affect some matter, and then the magic disspates.
What I think it could do, is to affect ethereal "matter", possibly creating incorporeal or ethereal items. However, only a creature that is itself incorporeal or ethereal, or otherwise possess an ability to affect incorporeal or ethereal beings, could use them. For axample, you could (possibly) create an ethereal walls that trap ghosts but do not affect material beings, or an ethereal (but nonamgical!) trap that reacts only to ethereal beings. That is assuming there exist some ethereal matter that can be manipulated. This is not a RAW use though, and you'd need your GM's approval to use it like that.
