So, yeah, I'm thinking of trying out a multiclass build for the Spiritualist and I'm wondering what classes would be a good fit? Cleric perhaps? A Phantom with the devotion emotional focus being tied to a cleric of Iomedae seems like a neat idea (and could probably have a cool backstory). Sounds good? Or not a good idea?

You're a pet-owning class whose pet is not advanced by any other class, and which has no equivalent to the boon companion feat.
In general the 6-level casters all have one or more things which really don't work with multiclassing. The hunter may be an exception because its focus is on the animal companion and other classes may advance that and have something to offer. For effective multiclassing, look to martial characters or to full casters with prestige classes, generally.

If you want to have a Spiritualist who has some nice Cleric flavour, go full Spiritualist and VMC to Cleric - you'll lose some feats, but that's not as big as getting your phantom gimped. That is, if the game allows VMC.
The Fated Guide archetype from Occult Origins might scratch your "divine in my occult" itch a bit, check it out.
If not, well, multiclassing full casters with a pet class means doesn't really work, there's no synergy between the classes and you'll end up frustrated.

The “Phantom Ally” feat is essentially “Boon Companion” for the spiritualist. Allows you to MC or level dip and not have a gimped pal.
Phantom Ally
Your phantom’s strength is fueled by your own diverse experiences and abilities.
Prerequisite(s): Phantom class feature.
Benefit(s): The abilities of your phantom are calculated as though you were 4 class levels higher, to a maximum effective spiritualist level equal to your character level.
