This actually belongs in the Rules Questions forum, as it's not a PFS-specific question.
He's talking about the Celestial Servant feat, from the Advanced Race Guide.
Last I recall seeing this come up, the CR of an Animal Companion was equal to the effective Druid level of the PC (though I may be mistaken).

That's what James Jacobs said in his thread at one point, and I don't know of any more recent or definitive word on the subject.

An animal companion doesn't have a separate CR; it's a class feature of the druid and is thus included in the druid's CR. If you encounter only the animal companion and not the druid, I'd calculate its CR based on the CR table used for monster advancement/creation.
I certainly wouldn't treat a lone animal companion as having the CR of its druid, as it simply doesn't measure up to the challenge bar of a character or other monster of that CR.

The problem with noting that the companion doesn't have a separate CR, etc. is that the rules are saying to apply the simple celestial template, but the simple celestial template specifically references the creature's CR: "gains SR equal to new CR +5". So it's a fair question as to how to figure out the thing's CR, and one I don't know of an answer to.

I'm building a Divine Hunter, but there are several other ways to get the celestial or fiendish template for your animal companion.
Also, while not a PFS-specific question, my Divine Hunter will be a PFS character so if anyone has a link to James Jacobs' ruling I'd be very grateful! I just want to have it on-hand for the inevitable questioning.

Oh, that, sorry! Then it makes sense to use JJ's guideline for lack of anything official. (This wouldn't happen if templates uses hit dice instead of CR....)

I've had 2 players turn there Animal Companions into Animla Companioms/Cohorts, so I ahd top work out CRs for them.
There is TTBOMK no official CR value for Cohorts beyond a +1 CR bonus for been an Animal Companion.
So what I did was look at the CR for the base Animal concerned and benchmakr that againgt the appropriate place in the Animal Companion.
If the Comapnion has gone beyond this point then you need to find a comparable creature to get further Benchmarks.
Then from those Benchmarks you estimate the CR ratinig for all the inbetween stages oof development based on HD. Ignore the special bonuses that come soley from been an animal comapnion (Evasion ecetre) nbecause these are covered in the +1 CR stuck on after the CR for the base creature.
Hope this helps.
Apolgies for typos. Have just wokrn up and can't read screen clearly yet.

I noticed that no one linked the comment by james jacobs for you. I searched his thread and found it, here you go
Notice this is where he says to use the CR of your character -1, and than he clarifies a couple posts down to use just your Character level = CR.
