With the new "swap" (part of Interact in Player Core, page 268) action you can "put away one item and draw another in the same action." In the old Core Rulebook, page 273, table 6-2 you can draw a weapon with 1 or 2 hands. I can't find a reproduction of this information in Player Core.
So if my character has a longbow held in one hand, can I use one interact action to swap, stowing the longbow and drawing my greatsword in two hands, or do I have to spend a second action to adjust my grip as well?
What if swapping from a two-handed crossbow to a two-handed greatsword? Does the number of hands I was using for the initial weapon matter in this instance? Can I swap from the two-handed greatsword to the longbow, or would I need to release one hand as a free action first?
Sorry for all of the questions - most of the rules are very clear, but sometimes things like this come up...

It looks like it isn't fully specified ... in the rules for Drawing and Stowing Items (page 267).
The number of hands you need to Interact is usually
clear, and if it changes during the action the action takes
the maximum number of hands needed during it. The
GM decides if it’s unclear. You can draw, pick up, or
hold an item that needs two hands using only one hand,
but you need to subsequently change your grip to hold it
in two hands if you want to wield or use it.
I think the first part of this is saying that you can Interact with two hands in order to draw a 2-handed weapon with both hands and be wielding it once you are done.
And the last part says that you can decide to only use one hand to draw a 2-handed weapon, but you won't be wielding the weapon afterwards. You would have to change grip to a 2-hand grip.
Also on the next page (page 268) it mentions this:
Swapping lets you swap only one item for another; if
you were wielding two weapons, you could put away
one of them and draw a different item, but you would
need to put away the second weapon separately.
So if you were wielding two 1-hand weapons or a 1-hand weapon and a shield, you would want to put away one of the items separately first before using Swap to change the second one for the 2-hand weapon. Otherwise you would be forced to draw the 2-hand weapon with one hand (because your other hand is full) and not be wielding it.

Again, the stow part of swap would free up one or two hands, as dictated by the stowed item. Then you use however many hands to draw. Stow a longbow? You free one hand. If your other hand was free, you now have two hands to draw a bastard sword two-handed. (I chose bastard sword as to note that you can choose how to draw it based on free hands at the time.)
Swap will require one or two hands depending on equipment involved.
