Sorry if this was asked already but being a Pathfinder newbie, I was curious about how each 1e AP impacted Golarion in 2e, big or small. While some are pretty obvious, like Ravounel, Oprak, the Sarkoris Scar, Casandalee, etc., for others I wasn't so sure. For specific APs I'm most curious about, it's Serpent's Skull, Mummy's Mask, Giantslayer, Strange Aeons, and Ruins of Azlant, but I'd love details for all of them honestly!
(Slightly related tangent: Did the Modules/Adventures also got 'canon endings'? I know We Be Goblins and its sequels probably do because of Lost Omens Legends but I wonder what else as well?)

The Lost Omens World Guide is currently the best place to go to for a generalized state of the world post-1E adventure, but the information you're looking for is spread through the text, not gathered in one handy place. We generally assume that an adventure's resolution resulted from a success by the theoretical PCs who played since it's kinda disrespectful to the fun any one group might have had playing an adventure to hard-code a failure into the setting.
A fair amount of the adventures don't have official results though, and won't until we have to decide for context on a new product that builds off the adventure, since the longer we don't hard-code those events in, the less potential disruption we might cause to any one table's personal history with an adventure.
Some big impacts (off the top of my head) for the adventures you mention though are as follows; folks on the Lost Omens team might have more details, or again, additional developments might be found in books like Lost Omens World Guide.
Serpent's Skull The world is now more aware of the threat posed by the serpentfolk, the gorilla king is dead, and the lost city of Saventh-Yhi is no longer lost.
Mummy's Mask There's several crashed flying pyramids throughout Osirion.
Giantslayer Not a lot yet I don't think, since this one was pretty remote/localized in scope.
Strange Aeons Not much; by succeeding in their job, the PCs help keep this whole threat secret.
Ruins of Azlant There's a thriving new colony on an island, and renewed interest in the Inner Sea and Arcadia alike in the ruins of this shattered continent.

I have a funny story about the outcome information in Lost Omens World Guide. When Pathfinder 2nd Edition came out in 2019, I began a PF1 adventure path, Ironfang Invasion, converting it to PF2 rules. I let my players read my copy of Lost Omens World Guide. A player became very confused at the map of Nirmathas and Molthune, because it had an extra nation Oprak adjacent to it. I had to tell her the default ending of our campaign would be the formation of Oprak, the nation sought by the Ironfang Invasion.
The campaign ended this August, after 3 years and 10 months. In my campaign world, Oprak is a province of Nirmathas locally governed by a council of many intelligent species, and only one third the size of the Oprak in the World Guide maps.
Lost Omens Knights of Lastwall gives a good update on what happened in the Lastwall region after the Tyrant's Grasp adventure. I am amused that Gendowyn, Lady of Fangwood, has an entry on page 55 of Lost Omens Knights of Lastwall. She was freed from centuries of captivity by the Ironfang Invasion party and, since Northern Fangwood is in former Lastwall, is helping the Knights of Lastwall.

I'm nearly halfway through running Mummy's Mask, and it feels like the Ruby Prince is going to have to clean house with the Pharasmin and Nethysian churches and rein in their political power. The Pharasmins almost botched the undead uprising and needed a bunch of foreign adventurers to pull their collective chestnuts out of the fire twice, while the Nethysians are likely to get exposed as concealing an ancient crime that ended up with Hakotep devastating Osirion's cities. There might not have been a lot the Pharasmins could have done otherwise, and the Nethysians involved are a reclusive sect, but once news gets out neither are going to be very popular.
And at least in my mind, this would be a perfect chance for those who worship the Gods of Osirion to promote them - they don't need Pharasma when they already have Anubis, Osiris and Selket. Have rebuilding a major temple to Ptah and reinstating the Apis Bull be a major PR project, rebuild the temples of Ra and Horus to promote civic feeling, expand the existing cults of Khepri and Wadjet that endured through the Keleshite Interregnum. My own party have already finagled a Wati noble to donate an "embarrassing sum" to a priest of Osiris there, who wants to restore the old gods, and if there's a 2e Osirion adventure I would definitely have the Pharasmins there have lost a lot of confidence and are trying to hold onto their unofficial grip on the city's government, while Osiremheb's temple is reviving the following of Osiris and the local nobles use it as a wedge to weaken the Pharasmins. And however they deal with Deka An-Keret, Tephu is going to be getting a new Haty-a after she tried to stop the people who saved the nation, with Muminofrah whispering in his ear in the party's favour.

I believe many people feel that integrating the RL Egyptian deities as Old deities of Osirion was a big mistake.
I do not expect Paizo to tell stories involving these deities in the future.
As one of these people, I don’t think Paizo would’ve put the Kemetic deities in Gods & Magic if they wanted to sweep them under the rug… I do believe we’re firmly stuck with them as an element of Osirion canon.

Second Darkness now never happened, right? So that's one AP where there are definitively no effects that you would have to concern yourself with.
It still happened. If we were to update it we'd have to make some changes...
1) Add in an adventure between book 2 and 3 that more gracefully exits Riddleport and sends the PCs on to the third adventure.
2) Heavily revise book 5 so that the elves are less standoffish and xenophobic and more supportive and welcoming to the PCs.
3) Change the drow in the adventure to something else, but keep the 4th adventure set in Zirnakaynin, and use the opportunity to clear up the "what happened there" mystery that we're now assuming is the norm, with all the other Drow cities in Sekamaina being serpentfolk cities, but Zirnakaynin being a city that they don't go to and no one really knows what's going on there.
As for it's other impacts on modern Golarion:

Yeah weirdly Giantslayer had almost zero effect on the political landscape of Southern Belzken and the Mindspin Mountains.
Giants are still just a scattered tribes and cities across Avistan and beyond, still living in a post-Runelord diaspora.
I think it's part of the reason why I see a lot of anecdotal evidence of people just sort of drifting away from the campaign after a few books. Even though the final book is theoretically rad as hell, and the premise is Giantslayer so you spend the majority of the time slaying Giants, there really should have been more emphasis on creating peace between Belkzen and Lastwall to work together against the Giant threat, to pave the way for the current political landscape of the region.

Giants are still just a scattered tribes and cities across Avistan and beyond, still living in a post-Runelord diaspora.I think it's part of the reason why I see a lot of anecdotal evidence of people just sort of drifting away from the campaign after a few books. Even though the final book is theoretically rad as hell, and the premise is Giantslayer so you spend the majority of the time slaying Giants, there really should have been more emphasis on creating peace between Belkzen and Lastwall to work together against the Giant threat, to pave the way for the current political landscape of the region.
That would have been entirely wasted effort, given what became of Lastwall (would would rightly have drawn criticism of erasing players' good work). Belkzen's current attitude, it turns out, was not predicated on a lasting peace with any of its neighbors, only attachment to its own self-determination.

The refugees of Lastwall need to go somewhere, why not their new mates in Belkzen?

More of our Adventure Paths alter the world than don't, so now and then the choice to do something like Giantslayer that specifically doesn't have any significant repercussions is deliberate.

Depending on how much you view it as "cannon" Jason Bulmahn ran a 2e 1 shot set in Trunau for Glass Cannon for a live show at Pax Unplugged in 2019 I believe. Was set after the fall of lastwall with the city now needing to get by without able to recieve supplies easily from lastwall.
But I too would personally love to know what happened "officially" to the cloud keep and to the red dragon orb from Giantslayer though I guess with the OGL shenanigans I doubt that second one will ever now be addressed...

the "after the adventure" stuff at the end of Giantslayer is great. Love the idea of a dream gigas deciding to intervene in Golarion.
