The feat only benefits reloading 1 handed weapons. That looks like a pretty complete list of 1 handed ranged weapons that you reload that aren't firearms.
I won't just say "yes" without the qualifier statements, because these threads stick around for a long time and people do sometimes go searching for questions that were already asked later, and Ammunition Thaumaturgy will work for any other 1 handed ranged weapon that gets published later that someone would need to reload, as well. (Especially with a big gear book only a few weeks away).
But yes, the "unless you also find a feat for Firearm proficiency" confused me about exactly what your question was, because that reads like thinking that thaumaturges can't use firearms, rather than like your GM in your particular game does not allow Access to them.
If you're really *particularly* keen on this build, then... well, your GM probably wont' let you take Drow Shootist. It does some pretty nice things for the hand crossbow action economy, though.
Alternately, there are some ancestries out there that get unarmed ranged attacks. We dug into them a while back.
