Quick question, if I make a level 1 character with an intelligence of 8, will I lose one of the slots for trained skills?

If a class gives me one trained skill and the ability to choose four trained skills of my choice, does an Int 8 reduce this to three trained skills of my choice?

It does reduce that number, yes. You're adding a negative number, which is effectively the same as subtracting in this case.

Each class is

"Trained in a number of additional skills equal to X plus your Intelligence modifier"

So if your modifier is negative, you do indeed subtract.

Further confirming the other's posts, if this case of Intelligence modifier were not meant to subtract skills if negative it would mirror the language used for Human ancestry Languages "1 + your Intelligence modifier (if it's positive)."
