My main gripe with this from an organized play perspective is that the creature is supposed to be Unique, meaning there is only one of them, yeah?
Well, FoP is one of the most played modules for PFS and nearly all Characters who currently do, or will at some point gain the Animal Companion feature will end up taking this as their AC. I've already seen it in practice during a local/remote game what with the lockdown still impacting stores where at one game two players had the Fiery Leopard, and at another one with 6 players a whopping three Fiery Leopards were being used, it srikes me as a bit odd.

More an issue with the use of the tag, imo. Bort's Blessing is a one-of item and only tagged Rare.

Well in PFS1 there was Riddywhimple (sp?), an intelligent unlocked familiar who kept meeting himself. A couple of us in this area had fun RPing that since the creature has a distinct personality.
There are similar issues with unique items on sheets and even unique experiences that one shares with adventurers who hadn't been there.
Reminds me of a PC who'd lost a charming NPC in one adventure then ran into her in a later one.
PC1: "You're alive!" *hugs*
PC2: "You died?" (Had played same adventure, but she'd lived.)
NPC: "I guess so."

That would be a job for homebrew rules. Fall of Plaguestone does not include any kind of system for creating or accessing unique companions. It just includes stats for one that is present in that adventure.

For Organized Play, you can find the Chronicle sheet that gives it as a boon here.
Surprisingly, that specific variation of the leopard doesn't appear on the Archives of Nethys. You will need to find a copy of the adventure to get its stats.
It is in on Archives of Nethys. You just need to go to the Animal Companion section, then click on "unique companions" and it is the only one listed since it is the only unique companion currently released.
