Basically, can I display Hide Armor and Leather Armor thereby having both not count for hand size and choose which one to use? Or can I have only one displayed with the other in my hand?

What about potions?

Yes, you can display as many cards as you want unless they say otherwise. (Ammunition cards from the Gunslinger deck, for example, only let you have one displayed at a time.)

Just remember that you can only use one of them per time you take damage.

More accurately, the party may collectively play no more than one boon of each type to affect damage to the same character from the same source, although powers that say they can be played freely do not count toward that limit.

So if one were an armor and one were an item, you could use them both. Or if one of them said it could be played freely.
