Mummy's Mask would be a cool one to adapt, as Kingmaker already has the exploration function down. Extract it down to exploring the Necropolis in parts 1 and 2, then Tephu in Part 3. After Tephu, western Osirion becomes your domain, as you creep north from Ipeq, then eventually southwesterly to the Barrier Wall and the Khepsutanem. Its a bit less free-flowing than Kingmaker, but the exploration element is definitely there.

I'd like to see Ruins of Azlant as I'm curious to see how underwater combat would be in a CRPG.
Given that they took away mounted combat as an option, and also did away with fly, have flying creatures fight on the ground and so on, I don't think underwater combat would be represented much different than normal combat on land.
I mean, maybe, if Pathfinder: Kingmaker is successful enough, the combat system can be reworked to include 3D movement, but that would also depend on a real 3D environment (not the 2 dimensional isometric environment) and probably some other things I don't even know about.

Curse of the Crimson Throne or Hell's Rebels would be great. I'd love to see a proper Urban AP and city done right (Baldur's Gate 2 was awesome because Amn felt so alive).
Skull & Shackles could be great but nips on the heels of Pillars of Eternity 2 a bit.
Jade Regent would be awesome, managing the Caravan and having the town travel with you across the world.
Rise of the Runelords feels somewhat inevitable at this point.
Iron Fang Invasion is a pretty good candidate as well.

Serpent's Skull would be a good one to pick since it would work with the stock NPC relationship mechanics. It's also one that would benefit from a second pass to rework some of its flaws.
