I have a character who survived a battle but lost his off-hand. My friends and I have looked around and can't seem to find any official rules as to who to treat this character with regard to skill checks, weight limits, etc. My hope is to keep this character going as a one-armed dude, so I'm wonderings is this is covered in any of the official Pathfinder materials or if this is something that is just table-ruled at all times?

Loss of limbs is one of those things that isn't covered in the official rules (at least to my knowledge), apart from the existence of the regenerate spell. So, essentially, you and your GM will have to discuss how the one-armed character should be treated rules-wise (possibly with some of the limitations reduced or removed once an appropriate amount of time for learning how to cope with it has passed).

Quoted from the Skulls and Shackles Player Guide
Loss of arm (–1 Str, cannot use two-handed
items*)
Quotes from Pirates of the Inner Sea
Prosthesis: People who lose hands, arms, legs, or feet
in combat sometimes replace them with prostheses:
realistic simulations of their missing limbs. Usually
carved of wood and painted to match the wearer’s skin
tone, these items have limited functionality, allowing a
person missing a leg to walk at half speed, or enabling a
person missing an arm to hold a shield in a fixed position,
but little more. Clever individuals have been known to
create small compartments in their prostheses, just large
enough to hold very small objects. A prosthetic hand or
foot can hold only an item with negligible weight, while a
prosthetic limb can hold up to 1 or 2 pounds.
Also keep in mind that Numeria has advanced electronics. Who wouldn't want a robot arm? Or you can always make a deal with a devil. (Read the contract or you end up with a Goblin arm like my old Dwarf.)

What level are you?
BBT posted a neat Demon Arm thing in another thread like this, but it's kinda expensive.
Other than that, Silence has got the rules. You lose one point of Str, which can possibly impart a -1 penalty to atack rolls, Str based checks and such, and lower your encumbrance a bit, or possibly not. You also can't use 2H items and the obvious dilemma of not having a free hand at all when using a weapon or other item (Affecting some Feats and abilities, as well as hindering Potion use and such).
