I'm on the fence about if I'm going to come this year. I live on the East Coast and it's becoming harder to justify flying out there for a con where I mainly hang around the hotel. This isn't Paizo's or the event's fault. I'm wondering about other things I can do while I'm out there. I'm not a big outdoors/nature person so hiking is out.What else is there to do out there outside of the con solo? If I do this again I may stay a few extra days. Any ideas?

I want to check out the Museum of Pop Culture. As a Twin Peaks fan, I’ve also visited the hotel and the diner locations that are nearby.

You can take the light rail from the SeaTac/Airport Station downtown to the Westlake Station. From there, you can take the monorail from its Westlake Center Station to its Seattle Center Station.
At Seattle Center, you can visit the Space Needle, the Pacific Science Center, the Museum of Pop Culture, the Children's Museum, and Chihuly Garden and Glass. There may even be a concert or some other event happening there that weekend.
Once downtown, you can also visit Pike Place Market. Argosy Cruises has a few short cruises (1-5 hours) that depart from the waterfront. I've done the Tillicum Excursion and Locks Cruise.
If you like baseball, the Mariners will be in town Friday, Saturday, Sunday, Monday and Tuesday (hosting the Twins first, then the Rangers).

^ These are all great suggestions, and my husband and I have done (and enjoyed) most of them. The aquarium is also on the waterfront, which can be good for a rainy day (or if you just like aquariums!).
I would highly suggest Seattle's Underground Tour (there's a similar one called Beneath the Streets), though make sure you wear good walking shoes as you could be on some slightly uneven surfaces.
It's definitely worth it to take a few days and explore what the city has to offer!

Museum of flight at Boeing field is about a half hour bus ride front the con. Highly recommend it. And Mueseum of Pop Culture has a rotating exhibit. Last year was the career of Jim Henson, this year, by the time Paizocon arrives, 80 years of Marvel comics. I have heard the Fremont Troll is cool and one day I will visit the AFK Tavern and walk by Paizo’s offices.
The Troll is pretty interesting and Fremont is a unique 'hood. I would also suggest visiting Gas Works Park.
David Byrne just announced the dates of his world tour and he’ll be performing in Seattle at the Paramount Theater on the night of Thursday, May 24. That’s something which interests me. Anyone else?

If you're into aviation, take the Boeing factory tour. Admittedly, it's about 45 minutes to an hour drive, but a unique opportunity to see the inside of the wide-body assembly areas (767, 777, 787 Dreamliner, and the reigning Queen of the Skies - the 747.)
Note, though, that the Boeing factory tour is not at Boeing Field where the museum mentioned by powell01 is, but is instead at the Future of Flight Center at the factory located at Paine Field in Everett.

...and the reigning Queen of the Skies - the 747.That reign has come to an end.

So, yeah, the last US-based passenger airline that was operating 747s has finally retired their last one. But there's still several hundred actively flying 747s worldwide. Lufthansa and Korean Air are both still taking deliveries of new ones, and British Airways has the largest fleet of active passenger 74s. UPS and my employer, Atlas Air, have orders for the newest model of freighter, the 747-8. I just flew one 2 days ago.
Admittedly, she's a much better freighter, but those just aren't as sexy and are out of the public eye.

Returning to things to do... If you live somewhere that doesn't have a good Asian grocery store, you could visit Uwajimaya (or Asian Wal-Mart, as my GF calls it) in the International District.

If you're interested in women's basketball, the Seattle Storm will be playing the Chicago Sky at Seattle Center's Key Arena on Friday night.
