Inventory tracking sheet question

So where on the inventory tracking sheet does one record small quantities of fairly expensive consumeables like Potions of Cure light wounds, Alchemist's fire, Holy Water, and similar items?

the standard Inventory Tracking sheet (part of the Guide) has blank rows in 2 columns of "Item, Cost, Bought, Sold, Expended" so any of those will do.
write the item name in, the cost, and the chronicle number you paid for it. When you use it line it out and fill in the chronicle number you'll get at the end of the scenario/adventure in the box on that line.
examples;
Purchase cure light wounds potion on chronicle 6 -> Pot: Cure Lgt Wounds 50gp [6] [ ] [ ]
after same item Used in adventure for chronicle 8 -> Pot: Cure Lgt Wounds 50gp [6] [ ] [8]

if you buy 3, then 3 line entries...

I use LibreOffice Writer and a large 6 page table with a fixed format and item list, using notation to denote purchases etc.
Wand with first level spell and 50 charges bought on chronicle 2 -> (1) Wand:Infrnl Heal 1@1 [50] . . . . l-slws 2PP ENC:1lb B2 {in spring loaded wrist sheath on left wrist}
After using a few charges in chronicle 3 -> (1) Wand:Infrnl Heal 1@1 [50]47] . . . . l-slws ENC:- 2PP B2
After many uses -> (1) Wand:Infrnl Heal 1@1 [50]47]42]39]35]31]29]21]19]12]7] . . . . l-slws - 2PP and finally on chronicle 18 -> (1) Wand:Infrnl Heal 1@1 [50]47]42]39]35]31]29]21]19]12]7]5] . . . . l-slws - 2PP B2X18 which is moved to the bottom of the table as a new one takes it's place -> (1) Wand:Infrnl Heal 1@1 [50] . . . . l-slws Enc:- 2PP B18

a scroll with 4 cure light wounds would be (1) Scr: Cure Lgt Wnds 1@1 [4] . . . . HH ENC:1 100gp B9
four scrolls of cure light would be (4) Scr: Cure Lgt Wnds 1@1 . . . . . HH ENC:4 100gp B9

You can also draw in an amount of little set of check boxes equal to the amount of consumables you're purchasing, and then tick them off as you use them. Whatever makes sense to you for your own purposes.

Also keep in mind that another answer entirely is... record this stuff however you want! Provided you still track a) when you buy it and b) when you don't have it anymore.

You must track your PC’s purchases over 25 gp on an item tracking sheet. A sample sheet is located on page 44, or you can use a sheet of your own design so long as it tracks the same information.

That's why a lot of my characters use the back of their first chronicle sheet as an inventory tracking sheet. As long as you have a list somewhere with the character, you're good.
