I know that I should run 1 at a time, but they go so slow. It would be cool if all players had one dedicated day to play each week for a few hours, but that is unrealistic given schedules and location. I guess it is enough to be playing and have good players.
It is tough if everyone is posting at once lot of Ninja posting issues. For that Roll20 or another similar software is better.

I'm fairly new to PbP, so I haven't tested my limits yet. Currently, I am running 7 tables of 2 games. Since I'm able to reuse a large portion of the material, it's not too bad. I'd like to get up to around 10 at a time, but still split between just two games.
I prefer each table gave a separate game so I don't mix up plot points between tables!

Also, since we're here, I'm curious how other GMs design encounters with CR? I tend to run it lower until I get a good feel for the PCs.
At first level I tend to softball encounters. To some extent at second level as well. After that, once the group is cohesive and has spent some time together so they get a feel for how others will act in combat, I make encounters more difficult.

I run a 5E game and it seems more difficult than 3.5/Pathfinder to set an appropriate encounter, either they are too easy or too hard. I am sure at some point I will get it right! :-)

I think I've gotten up to 4 or 5, and that was too much for me (even with some being shorter-term games). I find I can handle 3 pretty easily.
That said, I think it also probably matters what pace you keep and what level/complexity they are. A PFS scenario seems like it would be less work to me than an AP (though I could be wrong on that). Lower levels are also a lot quicker to handle as you have a lot less to keep track of in terms of effects and enemies than you do at higher levels.

I am currently running 4 but I think that's saturation point for me. I like very fast moving Pbps to give them the best chance of running to completion - even if that does take 3 years+
So I don't think I can handle more than 4 to keep up a schedule of posting 3 times a day on each with updated maps and so on.

I've had around 20. Yeah, had a lot of free time at that point. Currently running four. I do have a couple of decades of experience at pbp and feel I'm pretty successful at it. I've even had some adventures run a complete course! I doubt I'll ever get that high a number again. At least not until I fully retire.
