To answer your questions (which are in the new guide)
1. If the character has not been played as level 2, then you can rebuild it any way you wish, including changing out items and gear. The exception is anything purchased with prestige points cannot be refunded.
2. If the PC has been played as level 2 or higher, then if you own Ultimate Campaign, you can spend PP and some gold to retrain levels, feats, archetypes, etc.
3 (Extra). Lastly, just to make sure it is noted, you must own a legal source for the new features you are interested in. Legal sources are watermarked PDFs from Paizo with your name on them or the physical book.

and if they are lv2 and you don't want to retrain then you can just make new characters, so long as those new characters start at level 1.
That part I added (in bold) is assumptive, but you never know what people will interpret Ye Olde Internette as telling them...

From what I understand, and I may be wrong, If your character is 1st level as David H mentioned you can rebuild the character as you wish, with the gear purchased through prestige being non refundable. Also if your character has 3 xp, making him 2nd level but you have not played the character in a Pathfinder Society scenario yet, you may rebuild the character. Until I actually play that character in a PFS scenario as a level 2 character I can rebuild him.

First of all, welcome back to PFS.
As mentioned upthread, if you've only played the character in one or two scenarios, you should be good for a full rebuild barring any prestige purchases as I don't believe there were any sanctioned modules in Season 0 or 1 that would have been able to push you over the 3xp / played as a 2nd level character limit.

I am getting back into pathfinder after being gone since season 1. I have a couple of characters that only played 1 or 2 adventures. I am mostly curious if there were any rebuild options so that i could get these characters updated to current PFS rules, The last PFS guide i had was like 2.0, i see now the most current is 7.0?
Mostly thinking about being able to change my characters IE a core book wizard or sorcerer, to a Archetype or something along those lines.
Thank you for any advice on where to start looking for this information.

If you can add an archtype to any character for free so long as the archtype does not change any of the features already granted by the class at their current level
