For the Cavalier Beast Rider archetype, the rules state that I can choose a horse or a camel at level one. It also stated that additional mounts can be allowed, if the GM lets you. I would like to play an Axe-Beak, but know it may unbalance the game. I need help in lowering its stats, and need a reason for the stats to be that low. Maybe my mount was crippled once?
Please help me. I would greatly appreciate it.

The stats for an Axe Beak companions are in Bestiary 3. It's perfectly acceptable to use as-is.
Axe Beak Companions
Starting Statistics: Size Medium; Speed 50 ft.; Attack bite (1d6 + 1-1/2 Str); Ability Scores Str 10, Dex 17, Con 12, Int 2, Wis 11, Cha 10; Special Qualities low-light vision.
4th Level Advancement: Size Large; AC +2 natural armor; Attack bite (1d8 + 1-1/2 Str); Ability Scores Str +8, Dex –2, Con +4; Special Attacks sudden charge.

Hi Ultrageek.
In the Veranthea Codex (on sale at DTRPG for half price until the end of today), there is the (cavalier) Bird Rider archetype. That was specifically written to give a cavalier an axe beak mount, and the mount becomes better/faster as the cavalier levels up.
Also I am a cheapskate as well, Ultrageek, thus the Veranthea Codex page-for-page is the most affordable product on the store (aside from the free stuff, anyway - VC is less than 7 cents a page!) :)
My mutual skepticism is also why we released free goodies you can grab here, here, and here.
