Tanagaar (Inner Sea Gods P. 324) and Tsukiyo (Dragon Empires Gazetteer p. 63) are examples of good deities with the night subdomain (APG p. 94). The sixth-level night subdomain spell is nightmare which has an evil descriptor. I believe that a good cleric of a good deity cannot cast this spell. Some of the cleric archetypes only have one domain which means that they do not have an alternative sixth-level domain spell to choose. What is done in this situation? Why would a deity provide a cleric with a domain spell that they could never cast?
Some very nice people provided help for me on a related topic and I am further exploring "good" darkness.

Variant spell lists, similar to the Pharasma-specific Death domain, would be great. (It's now official, by the way; see Inner Sea Gods.)
As for the domain slot, using metamagic to augment a lower-level spell into that slot is one way to use it. You can even just prepare a lower-level spell in the slot. Of course, this is disappointing and doesn't answer your final question - why, God?
In non-PFS games, your GM might be willing to discuss alternatives.

Kalindlara answers most of your questions - a variant domain option is definitely the best option. For the record, even neutral clerics of a good deity cannot cast spells with the evil descriptor (per the Chaotic, Evil, Good, Lawful Spells class feature), so those domain spells are completely useless to clerical followers of the deity.
Of course, this is disappointing and doesn't answer your final question - why, God?

To whom would I appeal (PFS-wise) to allow for a substitute spell to be used? I could suggest that the night subdomain's parent domain (darkness) sixth-level spell, shadow walk, be used in lieu of nightmare.

Unfortunately, there's no easy way to get that ruling. Your best bet (and it's still a long shot) is to hit FAQ on your first post up there, and to ask others to do so as well. If it hits enough clicks that they deem it worth their time, they'll address it.
As for your second question, you may do exactly that. An extended summon monster V sounds like a fine time. ^_^
