The laser torch is a one-handed weapon. You can't use your strength modifier on damage rolls with the weapon. It resolves attacks as touch attacks.
Can you use weapon finesse with the laser torch?
Does the agile enchantment function for the laser torch?
You can put Agile on any weapon(or Amulet of Mighty Fists), and it will substitute Dex damage instead of Str damage. Note that this does not replace Str Attack for Dex Attack.
Since this is One-Handed, Weapon Finesse can't apply.
Since you have no Str damage to substitute... I don't think Dex damage can occur. It really wouldn't make any sense anyways.

The thing is, I think it makes sense to be able to use weapon finesse with a lightsaber, even if it had to be renamed for legal reasons.
It makes sense to me from a viewpoint that doesn't incorporate the lightsaber preconceptions, and just goes with the flavor text that these things cut the same regardless of how much force you put behind it, you should be able to make more use of your dex than your strength in making it hit, since you aren't overpowering your foe's defense, but just tagging him whereever with a beam of fire.
By extension, an enchantment that lets you use your dexterity to strike at the parts of your foe that hurts makes sense, to me at least.
But I think that your position is correct from the logic of the rules.
It just struck me as odd, as it seemed at odds with how a lightsaber/"laser torch" would work in combat.

I really don't see the laser torch as a lightsaber, it's a welder, like the one used in the next gen episode Starship Mine.

That sounds more like houserules to me. If you're getting it houseruled, then you don't need to be on the Rules section. I'd recommend asking in the Homebrew section.
Weapon Finesse does NOT apply because it is not a Light Weapon. Period.
If it now turns into a Light Saber all of the sudden, then everything makes sense. This is a homebrew though. Anything can make sense in a homebrew.
