In my experience, making BBEG's which are extremely focused on one single thing makes them a bit boring. Due to this, I think it's better to look at combinations that round each other out rather than those that boost a single thing to insanity (especially if that thing is offensive).
It's easy to make a BBEG that can autokill anything - just add levels. Multiclass and gestals are preferable because they can have a wide variety of methods.
The above mentioned monk/empyreal sorcerer sounds like something that fits this, or a monk/cleric for that matter. Or synthesist/oracle.

Actually, why the primary stats don't match up... alchemist and synthesist summoner could be an interesting combo with the alchemist discoveries are the ones that add stuff to their bodies. The guy could be part undead, with a outsider worn like a second skin, and a magical beast inside his body, and all sorts of other weirdness (a composite creature) but with maybe a permanent disguise effect making him look not only normal but Adonis like (along with high Charisma of course).
Probably not the most power gamer/rules lawyer combo - but they synergize well for pure freak factor.

I though those classes were both banned back in 3.5 days, but either way, the stat synergy is all wrong. The powergamer needs to put all their stats into int and showboating while the rules lawyer needs to put points into dexterity(for sleight of hand on the dice rolls) and obnoxiousness. Makes the combination of the two way too MAD.

Well, if you can get your hands on a Tome of the Odd 3PP, you can make a diplomacy check to replace dex with Int for the rules lawyer class abilities, and with maxing Int you get phat enough skill points to make that diplomacy check casually.
Especially as a DM.

Human Urban/invulberable rager barbarian | 2H fighter with the usual superstition (and ful fcb into increasing it)/spell sunder/strength surge/beast totem line on top of overhand chop/backswing/weapon training and the lunge/weapon focus/specializations with PA/Furious focus/cornugon smash/whathaveyou. Hit stuff. Hard.

That is another gestalt I play and it works really well. Wis does so much heavy listing and if you add in a weapon with Guided it is totally sick and wrong - one stat driving hit, dmg, AC and primary spellcasting. Ouch.
Obviously I like Gestalt builds and monks. :D

Just a thought,
I think a gestalt game where the enemies were Mythic (but the player characters were not) might be a somewhat balanced playstyle. The big problem with the gestalt characters is they outpound enemies for their CR. But mythic enemies would have basically the same sort of non-level based force multiplier applied, plus they'd get to ignore or defeat some of the abilities because they'd be mythic and the PCs wouldn't be.

i'm not real familiar with the mythic monsters but during the mythic playtest some friends and i tried a mixed group of about half gestalt characters and half mythic characters (who were, obviously, not gestalt)... the mythic characters blew the gestalt ones out of the water- it was so clearly superior that we only did it one session. i haven't seen the final product (so i'm not sure how much got changed) but i would think very carefully about trying to mix these rules. enemies that can truly challenge mythic pc might just wreak your gestalt players. (i know that this whole line is of topic from the OP, but i just wanted to follow up on mdt's comment for anyone else that was wondering about that).

Zen Archer Monk/Serene Barbarian. Worth it for full BAB and Serenity (rage) progression. You might have a hard time finding workable rage powers that fit the flavor though.
I was also thinking about ZAM (full)/Tattooed Empyreal Sorcerer (1)/Serene Barbarian (2)/Inquisitor (5)/Ninja (5)/Arcane Archer (7).

-Crane Style for insane defense
-Very good combat maneuvers
-Incredible movement speed (100 ft base speed at level 18 just from class abilities!)
-Full flurry on charge with Greater Beast Totem
-Incredible magic resistance with monk saves + monk SR + Superstition + Eater of Magic
-Movement + acrobatics + abundant step (+ dimensional dervish chain) = dead casters
... I honestly wouldn't know how to begin tackling this guy as a PC
Druid/Monk. Maybe a Maneuver Master monk
-Flurry
-Self-buff spells
-Wild shape shenanigans
-Very high damage melee attacks due to size increase
-High AC
-High Saves
-Incredible CMB and CMD due to monk and size increase from wild shaping
-Very high speeds (base speed of shaped form +60 ft)
-Earth glide from earth elemental form + high speed = dead casters
-Less MAD than either class solo
