Why couldn't you use gold then to buy a higher caster level spell? It seems the Guide only prohibits buying higher level versions with prestige.

Yeah, spellcasting purchased through PP is minimum caster level. Spellcasting purchased by gold can be at whatever caster level you want, assuming a settlement of 5000 or more. You can't add metamagic feats to the spellcasting service, but changing caster level is not currently prohibited for gold transactions.

I agree with all the above except the bolded part.
When PP are not used, then the normal rules for spell casting services apply.
You can get a 2nd level cleric to cast a cure light wounds spell on you for 1d8+2 for 20gp. Now why you'd do that rather than hire a 1st level cleric to cast two on you for that 20gp.
So if you wish to hire a 6th level cleric to cast remove curse, then you can do so. The restriction is only on PP spent for casting services.

Based on the ruling for make whole, I believe that you are incorrect about the paid spellcasting with GP, Andrew.
I extrapolate from that you can buy remove disease and break enchantment at guaranteed-success caster levels for the appropriate gold cost (possibly very ow).

Andrew, yet again, I think yuo have not fully read what you quoted in your own post.
I have bolded the part which limits caster level, and, as you can see from your own quote, it only limits caster level when the casting service is purchased with Prestige Points.
As mentioned by other posters, it has been mentioned by campaign management (Mark Moreland, IIRC) in relation to things like recommending spending gold for a remove disease at a higher caster level, as many diseases are not likely to be easily removed by a 5th level caster's cast.
