Not really a PFS specific question, but Adopted as I understand it unlocks a racial trait only, not a regional trait that just happens to be racial, so you could take Adopted to get Elven Reflexes, a half elf racial trait, but not Glory of Old, a Dwarven region trait (which I am not even sure actually requires you to be dwarven, just to live in dwarven lands).
Additionally, unless I am mistaken, Adopted does not allow you to pick 3 traits, you get Adopted and the racial trait it unlocks, nothing else.
EDIT: I'm mistaken about the last part apparently, here's a developer quote.

Dylos, while Glory of Old is a regional trait, it is also a Dwarven trait. Just like Excitable is both a Combat trait AND a Gnome race trait.
In this case Splitlip, you can take Glory of Old with adopted, but since you already have a social and a regional trait, you wouldn't be able to take either of those two categories for your third trait because you can't take two traits from the same category.

Eric, I think you're interpreting that a little too strongly. I think I this case Glory of Old is either a race or a region trait. When the rules were written, I don't think there were any traits that were on two lists, so it wasn't directly addressed.
However, if you read the example about the Courageous trait on page 326, it seems to imply that if a trait is on two lists, you could take it twice (although the benefits don't stack). That indicates to me that if it's on two lists (regional and racial), then it's actually the player's choice as to which category "slot" it takes up.

Sorry Jon, You are incorrect...Here is the reference.
Just an FYI, I talked to James Jacobs. Adopted is a social trait. Entymologist is considered a racial and a social trait both. Therefore, a player wouldn't be able to use Adopted trait to take Entymologist trait.
As this as an example you can see they are considered both.
