I have an Inquisitor(my first PFS character) who's personality is, shall we say, mundane. He's a member of the Silver Crusade, yet in the past he's never really stood for, or against, well, anything. Do Good when possible, but tolerate Evil when convenient... it's been getting rather boring to roleplay.
As such, I was considering making him more of a monster hunter; almost zealous in his pursuit of undead and aberrations(evil outsiders too, possibly?). I'm wondering if this breaks the spirit of PFS though, since even though nothing mechanically is changing, in a way the character is being rebuilt.
What do you guys think?

Absolutely nothing against it. And like Jiggy I'd say that "mundane" characters, or rather, characters that aren't "chosen", "guilt ridden survivors" etc fresh.
That being said, it's always nicer if he has a few personality traits that helps define the role-playing experience. So maybe, instead of being an angsty and revenge driven against undead he simply finds them unclean and wants to do his part (small as though it may be) to rid the world of them.

Sure, you can maybe even point your personality change to something that happened during a scenario.
For example, my gnome Alchemist (Mindchemist) 4 / Cavalier (Luring Cavalier) 5 was banefully polymorphed into a squirrel, and failed his save and lost his mental capacity. Clorrup ran out onto a branch and escaped into the wilderness of a demi-plane.
Had to spend the 5pp for a body recovery, and then wasted a free 12th level remove curse boon (failed the roll & failed a T-shirt reroll) and had to spend gold to do a 9th level break enchantment, of which I fortunately only needed one.
So now, the gnome only eats squirrel food and carries a bag of nuts with him everywhere.

Or maybe he's absolutely terrified of undead and responds to them with sort of an "OH GODS KILL IT WITH FIRE" reaction.

Exactly :) Which also makes for a strong heroic character; someone who is this scared of undead but swallows his fear and meets them head on in a fight. Pretty heroic if you ask me.

I will say, however, that I personally find "mundane" characters to be a breath of fresh air among the waterfall of cliches pouring through the Society. Maybe that's just me. ;)
What are some of the cliches you are seeing in the society atm? I'm working on putting together my boon characters, and I don't want to build a stereotyped character.

I think that there are cliches in general with any traditional RPG. OOTS is based around characters that are walking stereotypes, or are aware of them enough to try and distance themselves from them. PFS cliches are just like regular cliches, but with some Golarion lore. If you do your best to be different from the traditional RPG cliche, you'll probably be fine for PFS.

Anyone who broods.
Angsty loners.
People with unique destinies (if every other Pathfinder has a special destiny, it's not very special anymore, is it?)
Hellknight/Red Mantis wannabes.
Excessively bubbly gnomes or halflings.
I'm just a guy with a boomerang; I didn't ask for all this flying and magic!

So, a very formal, polite, courtious tien bard wouldn't raise eyebrows? Especially if it were a Nagaji?

Changing your PC's personality is not "rebuilding".
I will say, however, that I personally find "mundane" characters to be a breath of fresh air among the waterfall of cliches pouring through the Society. Maybe that's just me. ;)
This has giving me the idea to come up with a character with all the major cliches in one character!
I will make sure I play him at a table you are in Jiggy ;)

it is kind of fun to take a stereotype and twist it a little ... make other players go, wha...?
Half Orc ... whose mother is the Orc (she "got herself a man"), and everytime dad tried to get away, we got another sibling.
A Aasamir Cleric... who is 5 months pregnant.
A Half Orc Barbarian... hairdresser. Who everyone wonders if he's gay... but we never quite figure it out.
A Chelaixian Bard... who has never done a point of damage to anything other than herself.
An Alchemist whose mutagen alter ego is a huge hulking... cultured passifist who beleaves that talking is the best way to resolve conflicts. (alignment shift is from C/N to L/G. picture Mr. Jekil and Dr. Hyde.)
just a few ...

Wow, just wow. Being pregnant, huh? Well, talk about a guaranteed way to convince other people to heal you in combat.

Not yet. Took Ivy through Voices in the Void. That was probably some of the most fun I've had. Because suddenly, getting hit is *bad*. And you learn to use everyone to their maximum benefit. And how to use the terrain to your advantage.

I do remember the game where the PCs rush up to the building and the two Uthdan guards are outside "thinking" of rushing in to fight the BBG... the pregnant lady talked them into waiting outside while her and her friends went in to "put them down".
"so, let me get this strait. We have 2 beefy Viking guards holding the door for the Pregnant Beermaid (Cayden Cleric) and her companions to charge into the fight? wow..."

One of my favorite scenarios, and one of the best/most-unique/goodrightfun final boss fights in PFS imo. I'd encourage passerby to play it if they haven't had the chance to yet.

Cool, thanks for the advice everyone. He worships Sarenrae, so I was pretty much just thinking of taking a more militant 'Purge the enemies of the faith' approach. Not that Sarenrae has very many enemies, but that should make it easier to go all-out on the ones she does have.

When I played it, I was an oracle of lore. Negated most of the Non Combat right off the bat (too good at what I do). The BBEG was thwarted by having a ninja. Fun, yes. Not nearly as fun as it could have been.

He's currently level 8-2, so in the right bracket. The problem is getting down to Vegas, as I don't have much of a travel budget. You wouldn't happen to be going to PaizoCon, would you? It's practically in my backyard this year.

I meant the "next" NeonCon. If it had been held in the same place as the last onel my bus pass would have gotten me there. If I could afford one.
And, yes, I know NeonCon is no more.
I deliberately was not posting anything on the NeonCon is dead post from Thea.
