For me, anime is the most frustrating genre on the screen because I want to like it. But with the exception of a few gems, everything I've seen is garbage. It's agonizingly slow-paced due to internal monologue and/or repetitive flashbacks, or the characters are annoying, or the plot and characters are juvenile, or chibi mini-scenes pee all over otherwise good animation, or all of the above. In short, it's no better than the Saturday morning cartoons I stopped watching when I turned eleven.
Alright, enough negativity. Let's talk about the few gems. The ones I've seen are:
Miyazaki: Some of his films, at least. Howl's Moving Castle, Castle in the Sky and Spirited Away are anime favorites of mine.
Death Note: The one anime where I don't mind the internal monologues, because they're appropriate and mostly not too long. A great show all around.
Darker than Black: 'Soulless' mutant assassins and scifi mystery...what's not to like? Wish netflix would add more seasons to the instant queue.

One of my favorite series is Angel Beats. I started watching it out of boredom, and was hooked. It's the first, and only, anime that I've cried over.
Another I really enjoyed was Code Geass. Yes, the proportions are terrible, but what're you gonna do, it's CLAMP. Besides that, the animations are super smooth, and the I found the story to be fairly well written.
Why, Tequila? I thought we were friends....?
@ Freehold: Because I'm a horrible, horrible person? Honestly, you're one of my few friends who like anime, and I have a vague hope that you'll be able to introduce me to more great anime once I move back down to NYC. Or at least share a laugh over the bad ones. Ya know, in between school work, gaming, internships and finding a gf. :)
@ Edgar: Never seen Angel Beats, but it appears to be on netflix instant queue! I'll give it a try.
Angel beats is quite good. It, along with nyan koi and tytania have the FHDM hard to find seal of approval.
Fullmetal Alchemist, Trigun, and The Big O are my personal favorites. Case Closed is fun - I've spent entire evenings devoted to tracking down episodes, though there are so many (I think it's still going, too).

BIG O! SHOWTIME!
Can only take either series in small doses. Too many wannabe girl power gamers ruined lina inverse for me. The characters in the slayers are a parody, not how a game should be run.

Trigun I found fantastic, and I enjoyed The Big O.
Case Closed is really good, and yes, it's still going. This is the largest list I've found of episodes of it, although i haven't searched particularly hard. I'm not a huge fan of the player they use, but it gets the job done.
I'm in the same boat as FHDM, with One Piece and Slayers. WHile both good, they really are short-serving anime series for me.
Akaneiro ni Somaru Saka was good, albeit strange. I'm not a fan of the little-sister complex sort of thing, but this one pulls it off pretty well. Still a strange concept to get my head around, though. :/
Akikan was pretty good, a running joke with me and a few friends is that it's Pokemon, but with drink soda babes.
Aoi Bungaku is a series of stories from japanese folklore, and I found them to be pretty good. One of the arcs was illustrated by the same person who does Bleach, and so a running joke became "This is the weirdest episode of bleach I have ever seen," as that arc has some exceedingly strange scenes.
B Gata H Kei is good if you'd like a laugh. While it's about this girl who wants 100 ermmm.... partners, it's actually a pretty cute love story. I enjoyed it thoroughly.
Break Blade is a pretty good mech-anime. The episodes are about 45-50 minutes long, and there are six of them. The stry's a little lacking, but isn't too bad.
I thoroughly enjoyed Buso Renkin. It had a pretty good overall story, and the characters are both interesting and memorable.
Highschool of the Dead was nice and action-y, but be aware if you don't want a lot of fan-service, this anime's got it. WHile not as much as anime specifically meant to be fanservice, it's pretty widespread. Still, a good survival-horror series, mostly survival.
Higurashi No naku Koro Ni is a great psychological-style anime. The arcs, while separate, are intensely related, and each one gives you a little more information about all the goings on involved.
Kuroshitsuji, although haven't seen much of it, appears to be pretty good. Animation's good, and the characters are fairly unique.
Spice and Wolf is pretty good, although I haven't seen it in quite a while so I can't really go much more in-depth than that.
Yakitate! Japan. Very interesting. i'm currently watching it, so I can't really tell you about story, but the illustrations look deliciious. This is an anime about bread, and, while a little ridiculous, seems to have solid science behind it.
Case Closed is really good, and yes, it's still going. This is the largest list I've found of episodes of it, although i haven't searched particularly hard. I'm not a huge fan of the player they use, but it gets the job done.
Animefreak and Otakucenter are probably the best places to watch anime, in my experience.

Records Of The Lodoss Wars: Ghim is one of the best, if not best portrayal of dwarf in movies/series/tv. Also, a proof that contrary to misguided Paizo claims elves are smaller than humans!

Elfen Lied is one I just finished; it was amazing, if incredibly dark.
By playing the Super Robot Wars series of videogames I've been introduced to a lot of series that I haven't actually gotten a chance to watch yet. Stuff like:
Daitarn 3: It's been described as Adam West Batman meets James Bond, with giant robots. Not does the protagonist, Banjo Haran, pilot a super robot, Daitarn 3 is amongst the largest in the genre. It has an awesome theme song and Banjo has an awesome, badass catchphrase, "If you don't fear the light of the sun, bring it on!" (Daitarn 3 is solar powered, you see).
Theme Song: Come Here! Daitarn 3!
b]Galaxy Cyclone Braiger[/b]:Isaac Godonov assembles a team consisting of himself, Blaster Kid, Stephen Bowie, and Angel Omachi. Together they are Team J9 and they fly around the solar system in their transforming car/plane/giant robot, fighting crime and the forces of evil. I know Braiger mostly for it's role in Super Robot Wars Alpha Gaiden, wherein they provide much comedic relief. They are also often the only super robot you'll have available in real robot dominated routes, providing some much needed muscle and to a degree (as it's somewhat less sturdy than other super robots) some tanking ability.

Thanks for all the suggestions! Unfortunately I'll have to net dive to watch most of them, but I've got a few on netflix. The first episodes of High School of the Dead, Angel Beat and Elfen Lied seem promising. Though I'm hoping the female lead in HSotD wises up, because I've already given up on one otherwise fun anime show due to a blithely naive girl.
Oh and I have to ask: what's with these anime cat girls? Is it a Japanese folklore thing? They seem to pop up in quite a few shows.

Cowboy Bebop (movie and show but i liked the movie more i think) as well as Samurai Champloo should be mentioned. Steven Blum as an american voice actor is king of the world.
As far as sad animes go, I cried over Rumbling Hearts like a baby as well as Clannad - After Story. So much crying ...
As for newer anime, I've seen all of the Darker than Black and I LOVED the hell out of that stuff. Hei's a solid lead.
I also suggest Eden of the East and Spice and Wolf.

Moribito: Legend of the Sacred Spirit. It's totally an RPG campaign.
Umineko No Naku Koro Ni needs to be licensed here like, yesterday. And I want my second season of Higurashi as well. *shakes fist*
And if you like Faustian stories, Puella Magi Madoka Magica is being released on disc soon, maybe already has been.
There is also a swinging business in h-games being turned into tame anime. Utawarerumono and tears to tiara are the most recent, but I know there is at least one more that's slipping my mind.
Man, I feel bad about forgetting Utawa. Also, Madoka is streaming on Hulu.
gotta check that out.
It's this kind of pricing scheme that is causing piracy to run rampant. It's almost as bad as vhs back in the day.

The "space western" troika(Cowboy Bebop, Trigun, Outlaw Star) made for a really good year.
I really need to finish Monster. Wonder if the second boxed set it out yet. For that matter, really need to finish Master Keaton.

Kimagure Orange Road was the first anime to make me cry at the ending.
The initial post does give a nice list of likes and dislikes from various genre subtypes. As someone who's been watching and collecting anime since the mid 80's i can agree that there is a huge amount of different stuff out there.
A few that are 'fairly recent' (past few years) that i think you may enjoy based on the above.

One of my very very very very very very favorite TV shows ever is R.O.D the TV (which is the sequel to the 3 episode Read or Die OAV series, which is also excellent).
Note I say it's one of my favorite TV shows. It isn't just my favorite anime, it's just period one of my absolute favorite things to watch, ever. As in, if I had to throw away all my DVDs except one thing, my R.O.D the TV box set might even beat out my Doctor Who collection (but only might, mind).
Here is a somewhat SPOILERY AMV summarizing the characters and some of the events in the series (mostly the action bits): R.O.D AMV Expect the Unexpected. (The song is a remix of the series theme song.)
Here is a bunch of information about R.O.D the TV no one is interested in except me, but I can't sleep, so:
The Read or Die universe is basically a Japanese take on what I think of as Western action genres -- it's basically spy-noir + detectives + superheroes interspersed with a good bit of slice of life. The original Read or Die franchise (which are books and manga as well as the OAV) focused on one heroine, Yomiko Readman, a secret agent for the British Library (yes, you read that right) who can more or less control paper the way Green Lantern controls light (i.e., she can turn paper into anything she can imagine, including working paper planes, bulletproof shields, impossibly keen weapons, and whatever she likes). They made a spinoff manga called Read or Dream inspired by a Japanese sitcom called "I Like Cats After All" and "Charlie's Angels" (I am not making this up) about 3 Hong Kong detectives with similar powers to Yomiko's (although they are more specialized/individualized).
R.O.D the TV combines the casts of both franchises, making the 3 Paper Sister Detectives the bodyguards of Yomiko's best friend Nenene, a famous author. Why does Nenene need bodyguards? Because she's a famous enough author she gets people stalking and try to hurt her on a regular basis, and her usual protector Yomiko has been missing for four years...
Amazingly enough, while being familiar with the other media provides insight to some events in R.O.D the TV, you can watch just the series without having seen anything else. If you do at least see the OAV first, the Read or Die OAV is MUCH more action heavy, and the main characters from the OAV do not show up right away, so be aware you're going to meet a bunch of new cast first and be exposed to slower (tv series) pacing with a lot more slice of life stuff--but the action that's there is awesome and the paper mastery effects breathtaking.
If you like stories about strong women, funky but awesome super powers, vague lesbian subtext, tons of literary references, ridiculously overcomplex JamesBondmeetscomicbookVillain plots, good character development, a good mix of humor and drama, and spy/adventure/action, all scored with music inspired by James Bond type themes and similar 60s style spy movie music, then I highly recommend this series. If you start watching it and you're not sure, I suggest giving it 4 episodes before you make up your mind completely.
Also, it has Maggie in it, and Maggie is perfection, and I will marry her one day. (.)
As noted in my link above, the entire series is available (Japanese with subs only) for free legally on Hulu. The original DVDs are technically OOP but you may be able to find them, and there is a blu-ray version that still is in print.
Also, although I generally prefer anime in original language, this is one series that unless you actually speak Japanese fluently, I highly recommend accessing the dub version (legally) if you can--it is excellently translated and very well acted, and often its Woolseyfied in-spirit interpretations are better than the sometimes too-literal subtitles (although there are a few lines that do get lost in translation)--and moreover, there is often SO much action going on that the subtitles literally do obscure sometimes important details. It's not about being able to read and watch at the same time--I have no problem doing that--it really is that the subtitles distract from or even cover up the action. Also, often there are scenes where multiple characters speak at once, and the subtitles do a very poor job of indicating who is speaking in what order when it's not always obvious, so the dub is also better for tracking the dialogue as well. Of course the original Japanese is lovely too and if you stick to that you can't go too wrong, but this is absolutely the one series even the most die hard "sub only" fanboys should consider setting aside their anime-watching rules, if at all possible. That the legal free version is only Japanese with subs, though, I realize you may not have much choice anyway.
And in summary, it is the best thing since chocolate.
My other favorite animes (and no I haven't seen anything since about 2006):
Noir: Awesome seinen series about a pair of assassins tracking down/being tracked by a secret organization. Note it involves assassins and death, so violence warnings and all. Also there's lesbian subtext.
Revolutionary Girl Utena: I tend to love or hate shoujo, but I definitely love Utena, which is a dark fairytale meets everyday school life. It's about a teen girl who wants to be a "prince" and finds herself protecting a girl who is the target of mysterious sword duels held by the school's student council, who in turn are being manipulated to do so by a puppet master behind the scenes. It's also extremely difficult to capture in a nutshell.
Also warning: DO NOT WATCH THE UTENA MOVIE thinking it will be a nice neat summary of the TV series. Utena the Movie came out at the same time as the End of Evangelion film, and is often considered to be End of Eva's shoujo counterpart to its shounen. In other words, IT WILL MELT YOUR BRAIN AND YOUR BRAIN WILL PUDDLE INTO YOUR SHOES AND EVAPORATE IN THE SUN LEAVING BEHIND NOTHING BUT A FAINT SCENT OF CONFUSION AND INNOCENCE LOST.
But the tv series is just the right amount of late 90s brain f#%*ery while still actually having an enjoyable followable plot and NO segments whatsoever in which the line is uttered, "It's a big mistake to think you're the only one who can turn into a car!"
Trigger warnings: I should note that Revolutionary Girl Utena is not graphic but does have some themes of brother-sister incest (it does not depict it as a good thing. And I've seen enough anime to know I need to specify that).
Also not triggery but there is also lesbian subtext (and text in the movie). (You may notice a theme as to the kinds of anime DQ tends to watch)
The Slayers: Do you like fantasy RPGs? Do you like comedic stories inspired by fantasy RPG tropes? Do you like epic stories about tiny redheads with the power to destroy the universe with a single spell which are also a comedic series of tales inspired by fantasy RPG tropes? Then you should watch The Slayers!
And if you don't, Lina Inverse might get mad...
(Also, it is a series that DQ likes that doesn't actually have lesbian subtext but it has fantasy and funny things and explosions!)
Excel Saga: Look, I'd already seen Utena: The Movie when I saw Excel Saga, so there wasn't any brain left to damage.

Well, Yomiko's in the TV series too, she just takes awhile to show up. I miss Nancy I but I find Nancy II's development in the TV series interesting, even if she's a bit annoying at first.
I like the OAV for the high action fest that it is, with some character drama, but I personally prefer the more drawn out pacing of the TV series (and the action is still awesome when it happens). I do think the plot gets overly convoluted in the second season.
Also, as I mentioned, Maggie. And no one can be the best but Maggie. This are trufax.
My love for anime kinda waned in the 90's with the proliferation of comedy anime skewed toward a female audience. I'm a bigger fan of shonen action orinented anime and serious mecha shows. My shows also skew a little older. I've tried watching some of the newer shows and for the most part I dont care for them. With a few exceptions of course.
So of course my favorite mecha show of all time is Kido Senshi Zeta Gundam.
The Orignal Gundam Movies are a must. Not a huge fan of the first half of Gundam Double Zeta but it does get better in the latter half.
Gundam Victory is good but HELLA HARSH. (Poor, poor Uso..)
Despise Backstreet Gundam...I mean Gundam Wing. Really liked Gundam Seed and the parts of Destiny that I saw.

It is very important to note that Kryzbyn and I can agree on some things.
My love for uc Gundam is matched only by my hatred for the pathetic pretenders that attempt to associate myself with it. G gundam is a noted exception. Also the music of two mix makes the opening for gw tolerable.

It should be said about Escaflowne to watch the TV series. Avoid the movie if you can.
Tenchi Muyo: Ryo Ohki (The OVA series) is awesome. The TV series (Tenchi Universe) is interesting as well, but can be confusing (especially if you've seen any of the Ryo Ohki series). Was not a fan of Tenchi in Tokyo or Tenchi Muyo GXP.
Gasaraki suffers from coming out while Evangelion was big, but does stand on its own. RahXephon falls into this category as well.
And as far as epic anime go Giant Robo sets the bar pretty high.

Avatar: The Last Airbender (Legend of Korra as well - many don't consider these true anime, but they are at their heart and that's all that matters to me)
Record of Lodoss War (The OVAs and the TV series [which has one of the best opening sequences done in anime])
Rebuild of Evangelion (so far only two are out with one more due later this year in Japan and the final still to come)
Dragon Half (another comedy)
Aquarion
Perfect Blue
Grave of the Fireflies (a Studio Ghibli film that is not for the softhearted)
FLCL (Fooly Cooly)(you'll need it after watching Grave of the Fireflies)
