I've been looking for any Pathfinder rules- on buying.. and running an Inn (or Tavern).
Like..
-How much would a Medium sized Inn cost? (Buying the building already built).
-How much would it cost the hire a 'staff' for the Week/Month/Year?
-Building up-keep
Things like that.
Do any of you know of any rules on such a thing, or what would be your best guess?

There was actually a similar thread recently. You might want to search for that for more answers.
Really though, you are just going to have to wing it. I mean, what is "medium sized?" Is it in a city, or the country? How nice is the area? How many staff will you want? What is the power and treasure level of the campaign? Each of these pretty wildly changes the cost calculations.
I'd say just assume that the books sort of balance themselves at the end of the month. Give a bit of profit, enough to not be insulting but not so much that the party thinks of starting a chain to rake in the profits (unless you are into that sort of thing). A player owned tavern is fun, and minigames can be a nice break, but rules for detailed profit/loss statements aren't something that you will find in core Pathfinder.

perhaps you could apply the profession skill with a little imagination to work out what it might cost to hire staff. obviously more skilled jobs will have more points in profession. slavery could be an option?
real estate is obviously highly changeable, just like the real world. so i guess thats going to have as many answers as people. maybe consider the cost of a commercial building in the size you might like to imagine your inn as being, then compare that to the average wage where you are as a percentage. profession might be able to solve that one for you too, by applying your percentage in reverse in game terms.
as for upkeep - some kind of percentage of the building cost? 10% per annum perhaps?
then you've got margins to consider, and the cost of your raw materials (meat and veg etc) and so on...

There are is nothing in RAW for this. My DM charged me 35,000 GP in the Council of Thieves game I am in. I had to flirt with the cleric of Abaddar (go everyone being bisexual by default!), put up all of my gear as collateral, and promise a 5000 GP above and beyond the 15,000 GP loan I had to make.
It would seem weird in a game I ran, as I usually run low-money, low-magic games where a couple hundred GP is more than most people would see in a lifetime (so, the cost of an inn would be proportional to that). Pathfinder economics, however, are crazy. Once you get a few item creation feats it makes more sense to plunk down in a city for a couple years selling items than it does to adventure about the countryside.

Only if you and your GM don't understand the crafting rules can people do what whale_cancer said. Or with houserules. If someone desires to argue this, I urge you to create a separate thread. Or better yet, necro one of the billion threads on this topic.
The DMG 2 for 3.5 had rules for running a business.
Or you could throw ranks into profession, and do that.
