On page 81 of Brinewall Legacy, it says encounter indicated with an asterisk can happen at night ... but there's no asterisks.
The Varisian Caravan entry has day/evening specific text so that pretty self explanatory.
I can make some guesses on the others. Bad Weather and Treacherous Road hamper movement, so they're day (bad weather sucks at night but the entry only talks about movement penalty). Bandit Ambush is likely day too, hard to ambush somebody that's not moving. I'm guessing the others (Goblin Raiders, and Ogre Assault) can happen either time.
So 3 day only and 3 day or night?

At one point, I had a MUCH larger caravan encounter section, which included day and night encounters. Alas... changes to how we present the APs (namely, using 8 to 10 pages for NPCs and magic items) meant that I had less room for the adventure than I thought I had when I started writing it, and the caravan encounters themselves were the least invasive part to cut. We moved them entirely out of the adventure, in fact, relocating them to the volume's bestiary.
Alas... that bit about the asterisk stuff snuck past editing/development.
You can either ignore that asterisk comment, or you can go ahead and assume that it applies to ALL the caravan encounters, since that's kinda how the day night cycle works anyway. ;-P

I'd rather not talk about a "director's cut" even before the adventure's actually released. Maybe in 5 years...

I'm not sure what you're talking about, but since Gen Con is now less than a week away, you won't have long to wait to find out for yourself! :)

I doubt anyone wanted a director's cut with more caravan encounters. Maybe one day there'll be a Pathfinder 2 Jade Regent - if so, hopefully it'll either have completely rewritten caravan mechanics, or none at all.
More caravan encounters would appeal to me, although I don't use the caravan encounter rules. I've enjoyed GMing the caravan, and any additional inspiration for events along the way are always fun.
