In general named bonuses do not stack with similarly named bonuses.
Dodge bonuses are an exception here.
So to answer the questions:
1. No multiple resistance bonuses (to saves) would not stack, rather they would overlap and you would take the highest.
2. The robe of the archmagi gives an armor bonus to AC and as such would not stack with another armor bonus to AC (such as from armor).
3. An Ioun stone granting an enhancement bonus to INT would not stack with a head item that grants an enhancement bonus to INT.
