Most favourite? Order of the Dragon. It seems to be the “best” from the point of view of the PFS (just pick the Pathfinder Society as the group!), and also for home games. Plus, the challenge benefit (attack bonus) affects the cavalier’s allies too! :D It’s great for teamwork.
Least favourite? Cockatrice. It’s not an “order”; there’s no organisation to it. It’s just individuals who want to be selfish dicks who don’t care about anyone else.
I’m not keen on the Order of the Shield, thematically. Because cavaliers (ie. knights) were traditionally granted their knighthood by someone in authority. There’s no source of authority for this one, and “peasants” couldn’t afford the traditional arms and equipment... It just doesn’t “feel right” to me. I think it would be better if this order was a subset of another, such as for a good-aligned faith.

I agreed I feel they should rename cockatrice to "Order of the Douche".
My favorite is order of the shield probably, you do raise a valid point but I like the idea that perhaps one of the "little guys" (maybe a Half-orc freed from slavery) rises to greatness to defend those like he was.
I felt like Sword was the less baggage-y paladin from my first read through edict wise.

I can totally envision a bunch of cavaliers of the cockatrice having a fancy dinner and boasting over their own exploits.
My favorite orders are probably the cockatrice and the lion. They're thematically strong and have some cool abilities.
My least favorite order is the sword.
