Hello and thanks for looking into this question
If i have a rogue who has a ring of minor spell storing and i get a cleric to cast Animate Dead into the ring. What happens when i cast the spell on say... an Ogre corpse? Can i specify it to stay within a certain area or can it follow me or is it considered a roaming undead? or...?

I would assume the user of the ring would be the controller of any undead animated by a spell stored in the ring. The spell is cast at the minimum level needed to cast the spell. In this case (animate dead, so 5th level for the divine version). Just as the ring's user would be able to command a monster summoned with a Summon Monster Spell placed in the ring. As for maximum hitdie of undead controlled that gets a little fuzzy. I would say using the caster level of the spell to determine that (5th).
Thats just my understanding/opinion

Hi, this is the description from the core rule book that I found for these rings while I was trying to find out how long the ring can hold spells. Note the last five words. They would indicate to me that as a rogue, you could not cast that spell out of the ring and you would have to give the ring back to a cleric to remove it from the ring... unless your rogue takes cleric levels to cast it.
"...ring of spell storing contains up to three levels of spells (either divine or arcane, or even a mix of both spell types) that the wearer can cast."
