Undead Elementals
Unholy necromentals, Batman! So that happens if you try to conjure an elemental out of a dead lake!
For immunity, the rule of thumb is this: If it doesn't have any anatomy at all, you can't crit or sneak attack it. If there's a mostly formless aggregation of flames that somehow has achieved sentience, you don't know where to stab to hurt it.

where in the Core rule book is this explained? It wasn't clear in the Rogue section under sneak attack.
What about plants?
Animated objects are constructs. It doesn't seem to me they should be critable.

I believe the idea is that any non homogeneous structure has stress/ weak points (its easier to tear the arm off a construct then rip it in two at the waist). Crits and Sneaks take advantage of this.
Something made entirely of one substance (or is not material) doesn't have the same weakness (arguably).

Incorporeal undead, oozes, elementals are now the only things that are automatically immune to sneak attack and critical hits. Other creatures might be, but this is an exception to the rules and spelled out specifically in their stats.

Just as long as certain plants like shambling mound get it, I can't imagine where you'd sneak attack that thing.

My thieves' guild recommends Weed-B-Gone in a pump sprayer aiming at the twitching bundly bits of the shambling mound, since the word is one cannot sneak attack with flasks of acid, holy water or naptha (or any other splash weapon) any more.
