Is the animal companion of a druid or ranger, or the bonded mount of a paladin considered a 'magical beast' or 'animal'? Thus are they able to be affected by an Animal Growth spell?
What about under these updated rules?

A druid's animal companion used to remain an animal under 3.5, but I don't know if Jason envisioned it otherwise. At any case, I couldn't find anything that would say otherwise in his design focus thread.
In 3.5, the paladin mount's description specifically states that is is a Magical Beast. The Divine Bond class feature from pfrpg's paladin states that the mount is summoned from its celestial realm, which also suggest that it would be a celestial creature (whose type automatically changes to Magical Beast).
So in short, animal growth should work on animal companions but not on paladin's mounts.

I wonder then that since the paladin's mount is now being an extension of the druids animal companion mechanic, will it revert to being an Animal.

Of course - any animal that has an INT score raise above 2 becomes a "magical beast"
In such case -- an Animal Companion would no longer be a candidate for an animal growth spell, which does not work on magical beasts.

Did not see anything about INT progression, but I could be wrong. This would imply that an animal companion can do a lot more than it could in 3.5, just by having an Int score above animal level. It would also imply that it can have an alignment. I'm not sure if I'd like that.

Animals are not naturally capable of having a starting INT score higher then 2, but they do not automatically become Magical Creatures if they gain a bonus to this ability score. They could gain extra points of INT from advancing in HD, from being an Animal Companion, or even from wearing a Headband of Intellect.
