Yes, you can browse the Bank without an account. Having an account, though, lets you sort everything by what sourcebooks you have, lets you make requests, not to mention adding your own stat blocks.
I *like* the idea of stirges "acquiring" some of the abilities of the creatures they feed on. Would really make the PCs pay attention!

Kind of like X-Men's Rogue's ability...
I am trying to think about how that would look as a special ability and what that would ultimately do to the CR. The CR would change depending on what ability it would be, but the ability could look something like...
Ability Aquisition (Su) -- A creature with this ability that drains blood from a creature can temporarily gain one supernatural or extraordinary ability from the creature from which it drains blood. This temporary ability lasts for 24 hours after it drains the blood. No more than one ability may be acquired in this fashion at one time.
Not knowing right off the top of my head what all the different Su or Ex abilities there are, a DM might wish to limit what kinds of abilities can be absorbed. (This might work as a monstrous feat instead...)

Hmmm...how about a Fortitude check then? DC = 10 + creature's HD.

I added the umbral template to make them harder to see and to have the capability to drain both Con and Str. Be wary of your fire chunking wizard though or swarms don't last long.

Oh, they don't have a wizard, lol. A cleric, an archer, and a rogue.
Oh, that is bad. No wizard to back them up.....I feel for them. Though some of the cleric spells could still do some damage to swarms(I think so, though I never played one). I like some of the ideas that the people here have posted. Some DMs are devilishly evil when it comes to monsters...

As a baseline template, you might use some other ability absorbing special ability. The greater doppleganger, originally from FR, but reprinted in the Dungeon issue with Hall of Harsh Reflections, might be useful to compare. You can probably reverse engineer to figure out what CR boost "consume identity" gives that creature, and judge your own ability absorbing feat accordingly. IIRC, the greater doppleganger ability allows absorption of memories for any character up to the HD of the monster, and it can hold memories for up to twice its HD in victims all told. It gets to use most of the class features of the consumed victim, but not all. To use these abilities it has to first consume the victim's brain, then assume the victim's shape, and if it does something against the alignment of the victim whose shape it assumes, it's forced back into its own form.

OK -- you asked for it... Here it is...
There are 25 different incarnations of stirge ranging in all kinds of challenge ratings. There are fewer Kaiju, but they take longer to create and if you have an idea for a specific Kaiju, make a request and I will see what I can do. The Annihilator Kaiju is especially nasty.
For those of you that haven't put creatures/characters up on the NPC Block Site, I really encourage you to do so. Just the few that I have done has really helped me to understand how the new stat blocks work and are organized. I'm not saying that I am an expert, but I think that I am getting better at it...

This might not be the optimal spot for this, but I just submitted the primordial storm giant sorcerer and the cloud giant cleric you wanted, but I'm uncertain if I "claimed" them correctly... Hopefully, they'll be up in a not too distant future.
Also, I've posted a busload of giants already; perhaps you can get some suse out of a few of them?
