I've got an idea for a paladin eventually multiclassing into Destined Sorcerer to become an Eldritch Knight (that's all core), but none of the "fate" related gods seem to be conducive to a LG character...
Well, no. Fate tends to be a True Neutral in the vast majority of settings.
I checked a couple of Greyhawk fan diety lists and listed a bunch of LN/LG/NG deities that I found for your evaluation. I skipped those I know aren't worshipped in the Flannaess, but there are some names I don't recognize at all on this list! I have NOT looked all of them up.
Those marked with "*" are well known as very commonly associated with Paladins.

There's only one god of wine on that list, and I can't see a clan of dwarves worshiping him.
I don't suppose we'd be allowed to fill in any gaps we see in the pantheon, would we? I was thinking a minor Dwarven deity of Booze, Battle, and Brawling.
There are always ways to play within the system.

I will be submitting a gnome cleric/illusionist going MT if allowed. I hope to have him done tomorrow.
Single class only at first level, though multi-classing is allowed when leveling.
Another Q, can a wizard take one of the non-core schools eg a focused arcane school or an elemental arcane school (it's not an archetype, but they're not in the core book either)?
Specialist schools are very Greyhawk. I'll allow the Classic Arcane Schools for specialization, though not the 'subclasses' of them.

Ok, this didn't make much sense to me - the classical schools (universalist, abjuration, conjuration, divination, enchantment, evocation, illusion, necromancy, transmutation) are all in core already. I think you mean you don't want to see something like Conjuration - Teleportation subschool.
But I don't know if want to allow elemental - earth. (Clearly, you do not intend to allow Elemental - Air > Smoke subschool ).

Um, sorry, Geraint...no archetypes, though I like what you're doing here.
Okay, well, I spent all day going over the arcane archer type character in my head and I just want to play that classic elf character now.
So, I'm going to put together an archer/wizard. I'll just have to decide between ranger and fighter for the archery levels.
I'll start with a level of wizard because a level 1 wizard with decent dex and a bow is not far off a level 1 fighter or ranger.

Okay, went in a different direction after a bolt of inspiration this morning.

Long story short, Keonna Ostgood is an orphaned half-orc who was adopted by a pair of halfling adventurers who retired to raise her, and she grew up to become such a noble and cunning protector of her adoptive community that Yondalla blessed her with the mantle of a paladin. She's an unusual paladin, aiming for the Shadowdancer prestige class, tempering holy wrath with plain hobniz sense, so she may take some time to fully come online.

I am thinking of taking the feat Wasp Familiar for my (now half-Elf) wizard. It is tied to Calistria in the Golarion setting. To transfer it to Greyhawk, I propose to associate it with Olidmarra (CN, Music, Revels, Wine, Rogues, Humor, Tricks). Do you think this is appropriate? If not, which diety should it be associated with?

I think that would work well. You could also consider any of the Nature gods like Ehlonna, Obad-hai, or even Llerg, god of beasts and strength.

Right, Kelvieran is updated as a 1/2 even wizard.
Kelvieran is an apprentice of Manzorian, who was one of Tenser’s apprentices. Manzorian, even though Tenser left the circle, still works with the Circle of Eight, and has sent Kelvieran to Hommlet to investigate rumours of the resurgence of the Temple of Elemental Evil.
His 2 traits are:
Transformer of Tenser's School (renamed Transmuter of Korada, magic trait)
Peg Leg (Campaign, Skull and Shackles. I'm ignoring the bonus against sharks)

Bad-News first: It was confirmed yesterday that my hours at work will be increasing at least until the holidays and I'll be on 10 hour shifts/6 day weeks. I work for the Auto Industry, and overtime like this happens from time to time, as well as occasional shut downs. Part of the job, unfortunately. In any event, there is no way I'll be able to handle that, my impending move to a new house, AND this game in any sort of manner that will be worthwhile to any of us. Best case, the game will be boring and slow. Worst case scenario? I'll end up doing a half-assed version and the game will fail. So, for now, this game is being put on hold.
Good-News: This game, something I have been looking forward to running for quite some time, is NOT cancelled. Merely postponed. I will be coming back to this when things calm down, or at worst, if my work schedule stays extended, once I adjust to the additional hours and changes on my personal time.
I apologize to everyone hoping for this to launch sooner. I want to delve into Hommlet too. It just can't be helped at this time.
